Alex and Dafne know
that their path to victory


rests heavily with their menus

- and with their teams

[Dafne] I love Italian food,

so this menu is
gonna be very heavy Italian

What I'm thinking is
you're gonna do garnish

- Okay
- And you're gonna do apps,

so you have a lot of pasta, okay?
Sakari, you're...

Meat. You're gonna have strip and lamb

- Okay
- Mid-rare. Not on the chicken

- [chuckles]
- Raw chicken all night, Chef

Heard! Uh, fish is...

[chuckles] ...baking salmon

I mean, it's literally
miso-marinated salmon thrown into an oven

- [snickers]
- [Alex] Who would like to be on apps?

- I'll do apps. I've done apps
- [Alex] Apps? Good

- I mean, I can take apps
- Tara, I feel good with you on apps

- [Tara] Okay
- [Brett] I am a little worried

about Alex picking Tara over Abe

At the end of the day,
if things get weird,


she's gonna crumble under the pressure

Alejandro, I'd rather you be
on garnish than apps...

I feel like there's a rift
between Tara and I

I'm gonna give my punishment to Tara

how Tara is feeling right now


Hopefully, she can cook
some damn good food

And we're gonna make it happen for her

the
Hell's Kitchen winner

and his next head chef

The teams are now heading to the kitchen
to prep for the final time


I'm gonna sh*t my pants. I'm so nervous

This is it

I have a great menu, a phenomenal team

I am ready to just push out this menu...

- [Christina] Good morning

...and become the winner of Hell's Kitchen

[shrieks]

Okay, so halibut crust,
I would say do, like,

- If you can just start doing that...

[Alex] Maybe a hair more char?

Yup. It's delicious

- Let's get you set up for cold apps
- Yeah

I put the Old Bay over there, right?

- We're gonna this
- Okay, but we're not doing that

If you guys want me to take anything in,

that you guys are doing

so I know you guys are good

You know, the nerves are always there

Listen, I've been doing this
a lot longer than you,

and I still get nervous,
so that's a good sign

At the heart, for you, is what?

It's definitely not the money

It's that feeling of the crowd
and the dining room lit up

And family have been a huge inspiration,

- haven't they?

I love them so much

I wanna make them feel proud
because it's, you know...

[all sobbing]

what I needed to finish strong

As a daughter, as a first-born American
in the whole family,


it is just the greatest achievement
anyone in our family has ever done

keeps breaking on me

Mm-hmm. Way too rare, so just be careful

Okay. Next, this is a warm crab salad

with a sauce gribiche,
smashed tomato crostini

Yeah, beautiful. The lumped crab,
exceptional, delicious, stands out

He likes it? Man, sweet relief

Truffle risotto with a seared scallop
and chanterelle mushrooms

- Great flavor in there
- [narrator] Next, Dafne presents...

A Wagyu meatball
with crispy panko and burrata

The flavor is amazing

- Now, what on earth has happened to this?
- [Dafne] Yeah, the Wagyu...

[Ramsay] First of all, presentation-wise,
it looks terrible

It looks like a f*cking dog's dinner

on a classic Italian cuisine

with a little twist of Dafne

from the sound of my voice,

I am not from LA

I am from the middle of Tennessee

Southern food is really what I know,
what I love,

so we're gonna do some elements
of Southern cuisine

and hopefully make some
of the prettiest food that's very tasty

The beef tartare is a very intricate dish
when you're plating it

So Abe can jump on and do the cold apps
if necessary, yes?
