[narrator] Previously on
Hell's Kitchen: The American Dream...

Chef Ramsay turned to
a uniquely American activity

to inspire the chefs.

Hell's Kitchen! Let's go!

Forty-five minutes out. Work fast.

[narrator] They were then challenged
to elevate American comfort foods.

I wanna do, like, a pizza dip and, like,
bake the pizza dough off, like, chips.

[narrator] While some chefs received
more jeers than cheers...

I asked you to think outside the box,
but you've sort of gone to Pluto.

[narrator]
...others had their team celebrating.

Braising tomatoes in red wine?

-Welcome back, young man.
-Thank you, Chef.

[narrator] It came down to
the battle of the...

Lobster roll. Here we go.

-[narrator] And it was Jermaine...
-We got the warm lobster roll.

I elevated it a bit
by adding a little bit of bacon.

[narrator] ...that secured the win
for the Blue Team.

[cheering]

-[narrator] During dinner service...
-She's not saying anything.

[narrator] ...Sandra's silence on garnish

threatened to bring
the entire Red Team down.

If you're gonna stay silent,
you may as well go home.

[narrator] But Donya on the meat station...

Let's push, girls. Let's push.

[narrator] ...made sure her voice was heard.

When the whole kitchen's
working together, it's like a choir.

[vocalizing]

-Nicely cooked, the New York strip.
-Thank you, Chef.

[narrator] And she led the Red Team
to a successful service.

-But in the Blue kitchen...
-Blue team, come here.

-[narrator] ...Mattias...
-That is f*cking raw.

-Yes, Chef.
-That is f*cking raw.

-[narrator] ...and Ryan...
-Walking lamb, walking lamb.

[narrator] ...had the Blue Team on thin ice.

I've got f*cking raw lamb.
I'm done with this sh*t, man.

[narrator]
While Jason tried to take a shortcut

and switch up Chef Ramsay's recipes.

Smearing cold butter on a f*cking steak?

You do it my way,
or it's the f*cking highway.

If someone talked to me like that,
I would burst into tears.

[narrator] The Blue Team lost
and nominated...

-Mattias.
-[narrator] ...and...

-Jason.
-[narrator] In the end,

-Chef Ramsay sent...
-Mattias.

-[narrator] ...home...
-Love you.

[narrator] ...ending his American dream
of becoming head chef

at Gordon Ramsay's Hell's Kitchen
restaurant at Caesars Palace in Las Vegas.

And now, the continuation of
Hell's Kitchen.

Get out of here.

It's hard to watch Mattias go home,

and to see someone as arrogant as Jason
staying back hurts me.

[Atoye] That was embarrassing.

So Chef Ramsay giving me
some criticisms, it's just that.

Any... Any issues with what happened?

Any... Any issues with what I said?

You had these two steaks,
and you're smearing them with cold butter

and sticking it in the oven.

The steaks were resting.

And I was flashing them
when they were fired, Chef.

I want it butter basted.

-100%.
-Yes?

Understand the f*cking difference.

You are a big liar. Like,
you won't even own up to your sh*t.

I would have let Mattias stay another day

and got rid of that f*cking
captain ass douche bag.

Don't do that, Jason.

I don't like people that act like
they don't know what they talking about.

You know what the f*ck you said
out your mouth the whole time.

Whole time, you talking sh*t.

Whole time, you running down
your f*cking resume.

Well, why the f*ck you here
if you're better than everybody?

-I'm not better...
-You're... Let me finish.

-I'm not better than anybody.
-Yes, you feel that way, Jason.

-I don't.
-Yes, you do.

You talk sh*t the whole time, bruh.

-It's just...
-No, no, no, listen.

-Don't ask me a question and then...
-I'm not asking you. It's rhetorical.

You just asked, "Why are you here?"
So allow me to talk.

-Look, one thing I'm not...
-Why don't you let any...

Every single one of your team members
have complained about you because of this.

Which team... Hold on. Wait one second.

Oh.

Hold on. Team! Team!

Oh, my goodness.

I just think Jason needs to
keep his mouth shut right now.

[Raneisha] Jason said my whole team
be talking about me.

Let's come handle this sh*t real quick.

[John] Just take it.

-I'm just gonna go to my room.
-No, no, no, you... I wouldn't.

What you leaving for?
Because you know you a liar, dog.

-I don't like drama. I don't like drama.
-That's for the Blue Team to handle.

-I am anti-drama, and this is all drama.
-Now he's anti-drama.

[Jason] I am anti-drama.

-Now he's anti-drama.
-What happened?

[Raneisha]
You f*cking with the wrong ones, homeboy.

-Hey!
-Hey-oh!

Oh, damn.

Let's kick some ass. Let's kick some ass.

-Let's go!
-[all] Good morning, Chef.

-Good morning.
-Morning, Chef.

One of the things
that I love about America

is the unique culinary delights
you'll find across the various regions.

Anytime you're in Boston,

you have to have
a delicious bowl of chowder.

And New Orleans,
love that delicious gumbo.

In Kansas City, the most amazing
beef and pork ribs.

Seattle, delicate and delicious
fresh oysters.

All iconic, regional American dishes.

But there is one
uniquely American classic dish

that can be found in restaurants
all across the US.

-Oh.
-Oh, wow.

[all] Surf and turf!

Oh, my God.

-[all groaning]
-[Raneisha] Oh, wow.

-Would you look at that?
-[Devon] Oh, my God.

It's the surf and turf protein relay.
We got this in the bag.

The ladies aren't
physically inclined enough.

They don't wanna run. They wanna be cute.

[Ramsay] Listen carefully.

Each team will compete one at a time.

And you'll be paired in groups of two.

You must correctly identify both proteins

in the four surf and turf combinations.

Yes!

If both proteins are wrong,

-the light will turn red.
-[buzzer sounds]

If both are right,

-the light will turn green.
-[bell dings]

If only one of your proteins is correct,

-the light will turn blue.
-[buzzer sounds]

I will not tell you which is right
and which is wrong.

The team that identifies

all four delicious surf and turf
combinations the fastest

wins the challenge.

Red Team, because you won
the service last night,

you'll step up first.

Blue Team, you'll head to the dorm.

What time do you think
the girls will get this in?

See you in the morning, Chef.

See you in the morning.

-Oh, no!
-[all grumbling]

Yo, they're so funny.

The clock is about to start.

-Go! Let's go.
-Let's go.

Gently, gently.

[narrator] In today's
surf and turf pallet challenge,

Carmen and Atoye are up first

and must correctly identify both proteins
used by Chef Ramsay.

You know, the seafood,
I was a little bit thrown off by

because nothing should ever be
what it seems like.

So automatically, I start thinking
to grab something else.

-Let's go.
-[Carmen] Oyster.

-Try venison.
-[Ramsay] And?

-And I wanna say crab.
-Yes. Go.

-And you've got...
-Yeah, ladies.

[Carmen] Crab and venison.

[buzzer sounds]

-One right.
-Okay, one right.

I think the crab is right.

No, it's the venison. Leave the venison.

-It's the crab.
-Venison, no.

Try another... The tenderloin.

-Wanna try ostrich?
-Okay.

That looks like venison.

-Ostrich and crab.
-[buzzer sounds]

-Damn it.
-Okay. The crab's wrong.

It was the crab.

-Crab was wrong.
-Crab's wrong.

-Bring the venison.
-Grab the venison!

Grab the venison!

-[Ramsay] Ladies, come on.
-Fish!

What have you got?

-Crawfish and venison.
-And it is...

-wrong.
-[buzzer sounds]

-Go back with the crawfish.
-Go back with the crawfish.

I keep seeing blue, blue, blue.

And, you know, then I start to realize,
maybe I'm overthinking it.

And the answer might actually
be right in front of us.

So I go straight for the oysters.

-And?
-Oysters and venison.

-It is?
-[bell dings]

-Yes!
-Yes!

-Well done.
-Keep going.

-Go!
-[shouting]

-That's a langoustine.
-What have we got?

That looks like maybe crabs.

I see a langoustine shell,
and it's filled with snow crab legs.

I know that from tasting it
and from feeling it.

-Try the lamb!
-It's king crab leg.

No, that's a langoustine shell.

Crab and beef.

-[buzzer sounds]
-One right.

-Okay, let's take the beef back.
-No, no, no! Take the crab.

-Hey, they're tasting it.
-Take the crab.

-They're tasting it.
-Different fish.

What?

Get the langoustine.

I don't think it's gonna be langoustine,
but I'll run it.

-Why wouldn't it if it's in the shell?
-There we go.

Langoustine and beef.

-And no.
-[buzzer sounds]

-No, no.
-Take the beef back!

-Take the beef back!
-It's crab.

-It's crab and...
-Bring the crab, bring the crab!

I knew it was the crab.

I don't know why I didn't
go with my gut on that one.

-It's crab.
-Bring the crab.

Bring the crab! Bring the crab!

-Work it out.
-Try another meat... ostrich.

-And?
-[bell dings]

-Yes!
-Yes!

Go, go, go, go!

Melissa and Leigh blow through this bitch
in, like, a minute, and I'm like, yes!

That's pork chop. That's pork.

-Come on, let's go.
-Five minutes gone. Come on.

-All right.
-Go together.

-That's pork.
-Pork?

-Go together.
-That's pork for sure.

Good. Well done, Sandra.

-Pork and shrimp.
-Pork and shrimp.

-Pork and shrimp.
-Shrimp right there.

-One protein.
-Let's get ready.

-And?
-Pork and shrimp.

-It's langoustine.
-[buzzer sounds]

-f*ck!
-Get the langoustine, go.

-Langoustine.
-Come on, come on.

-Oh, yeah, look.
-And?

Langoustine and veal.

-[buzzer sounds]
-And you got one right.

-I would leave the veal.
-Leave the veal. Get the langoustine.

Okay. [laughs] Come on, ladies!

-Halfway there!
-Get the shrimp!

-Just grab one and run it!
-[all shouting]

Shrimp! Get the shrimp.

-Try something!
-Come on, girl. Come on.

Come on! One more.

-Crawfish?
-Crawfish.

-Come on!
-Mm-mmm.

Grab something!

-Grab it, and f*cking run.
-Try something!

Oh, my God.

Just try, just try.

-[buzzer sounds]
-It's wrong. Come on.

[all shouting]

-Branzino and veal!
-It is wrong!

Come on, come on! Come on!

-Run it... Yes!
-Just try it!

-[all shouting]
-Try the salmon.

-Come on!
-Try something.

-That's not lobster.
-No way.

-It's not lobster, guys.
-Veal, lobster.

-It's not.
-[buzzer sounds]

-Ooh!
-[all] No!

-[all shouting]
-f*ck!

Oh, my God.

-No!
-[buzzer sounds]

-Put it back!
-Come on!

-[all shouting]
-Here we go.

-Here we go. Here we go.
-Halibut! Veal and halibut!

-[bell dings]
-[all] Yes!

-Next, next.
-Come on, let's go.

-Oh.
-Go, go, go, ladies.

Raneisha and Sammi,
I really hope you two pull it together.

-Come on.
-Gotta come together.

-Run it, baby!
-Good job, Raneisha.

Chicken, scallops!

-[buzzer sounds]
-No!

Turkey, swordfish!

Turkey and swordfish.

-No!
-f*ck.

Scallops! Try scallop.

Sea bass and squab.

Sea bass, squab.

-[buzzer sounds]
-No!

-Come on!
-Rabbit and monkfish!

-All right.
-Rabbit and monkfish.

-[bell dings]
-[cheering]

I was saying, it was either that
or the other one.

-Oh, my goodness.
-That was the most stress

I've ever had in my life.

I am praying that these boys suck
worse than we did.

Blue Team, the ladies did it
in five minutes and three seconds.

Damn.

Plus another eight minutes.

[laughter]

-Okay.
-Oh, we got this.

The time to b*at is

[Jason] I'm not concerned about the time.

There's not a doubt in my mind
we're gonna win.

Go.

[narrator]
With the women's time locked in,

Jason and Ryan try to
get the men off to a fast start.

Let's go. Let's go.

-Yell out. Yell out.
-Let's go, let's go.

-Mussels, lamb.
-[buzzer sounds]

No!

-Hustle up, fellas.
-Talk to each other, guys.

-It's something lean.
-Oh, wow, something lean?

-And you got...
-Clams and venison.

-[buzzer sounds]
-One right.

-[shouting]
-Keep the venison.

Venison, crab. Venison, crab.

-[buzzer sounds]
-No!

No, no, no, no. Let's go.

-Hustle!
-You're making good time.

-You're making good time.
-Venison, oyster.

-And?
-Venison, oyster.

-[bell dings]
-Yes!

-Go, go, go!
-Next, next.

Next one, let's go.

-Come on.
-It looks like a prawn. Could be a duck.

[Dahmere] I'm very competitive,
so I wanna win no matter what.

It's like Jekyll and Mr. Hyde.
You know, you make that switch.

-[tires screeching]
-[all shouting]

It's natural, man.
It's just something that's in me.

-Elk and langoustine.
-[buzzer sounds]

-No!
-No, no.

-Crab, crab.
-Come on, let's go.

-There's a pile of crab meat.
-Go, go, go!

Shout it out, come on.

-Ostrich and crab.
-[bell dings]

[cheering]

-Go, go!
-Boom!

Well done. Well done. [laughs]

Chicken.

f*ck the veg! What are you doing?

My dumb ass takes a bite
out of the f*cking garnish.

I bite into the green bean.

And I'm like, damn, this is
a f*cking green bean, you know?

-[laughs]
-We came to play!

-[shouting]
-The f*cking greens.

Chicken. Where's the chicken?

-f*ck the fungus!
-It's surf and turf.

Chicken.

-It's surf and turf, you donut.
-Yell it! Yell it!

-Chicken!
-Sorry, one behind.

-[laughter]
-Chicken, wrong.

Chicken!

Turf and turf.

Bitch, it's surf and turf!

What?

-Pork?
-Pork, pork.

-The fish!
-It's surf and turf!

-Get the f*cking fish!
-Surf and turf!

What... look at...

-Go!
-One, one, one.

[speaking Spanish]

Get the f*cking...

-[buzzer sounds]
-Put it down.

-Veal.
-Put it down!

-Go, go, go.
-Take your plate! Take your plate!

-Take your plate!
-Calm the f*ck down and tighten up!

-Focus!
-Calm the f*ck down

and tighten up, let's go!

[Red Team speaking Spanish]

[narrator] With the clock ticking down,

Brad and Jermaine are struggling
to identify the surf and turf proteins.

[Ramsay] Come on, gents.

Calm the f*ck down and tighten up.
Let's go!

[narrator] And their team
is getting frustrated.

Shout it out! Shout it out!

-Shout it out!
-Halibut, halibut.

-[bell dings]
-[all] Yes!

-Way to go! Bam!
-Okay.

-Go for the protein.
-It's not fish.

-What's that? Pork?
-Pork.

-Go, go, go, go!
-Come on, let's go, together.

Go!

-Come on, fellas.
-Come back. Come back.

-Sea bass and pork.
-Sea bass and pork.

-[buzzer sounds]
-No!

-Salmon, salmon! Grab salmon.
-It's not f*cking salmon.

-Sea bass and rabbit.
-Sea bass and rabbit.

-[buzzer sounds]
-One is right.

You've got seven and a half minutes.

-It's not chicken.
-All right.

-But it's poultry.
-It's one of these.

-Bring the rabbit back.
-Bring the rabbit back.

The rabbit is right.
Bring back the rabbit.

-Let's go.
-Did you try branzino?

-No.
-You have six minutes.

-Just bring a damn fish!
-Bring a fish.

-Bring a fish!
-Just grab something!

The f*ck are you debating about? Bring it!

-Shout it out!
-[both] Rabbit and monkfish.

-[bell dings]
-[cheering]

-f*cking...
-Yes!

-Whoo!
-Yes!

-Way to play!
-f*cking go.

-Way to play! Way to play!
-That's what I'm talkin' about.

We've just won three challenges in a row.

I mean, our ability to
work as a team is unrivaled.

[Ramsay] Ladies, you set the bar.

Blue Team, you absolutely raised the bar.

And now you're in for a fabulous reward.

You should get jacked, lumberjacked,

because all of you today
are going axe throwing.

[cheering]

[Ramsay] Trust me, it's a blast.

In fact, I think it's so much fun,
I may join you.

[cheering]

To be with Chef Ramsay

and to do something like that
with our boys, it's f*cking insane.

So, Red Team, I've got beautiful, whole
gigantic salmon arriving from Alaska.

-In fact, eight of them to get prepped...
-My lord.

...scaled, gutted, butchered, broken down,
and beautifully portioned

ahead of tonight's service, yes?

[all] Yes, Chef.

Okay, head back to the dorm.

Some of us fell short this challenge,
and you could tell,

it's gonna be
a little bit of a rough road.

[Melissa]

[Christina]
Careful to hold it with both hands.

Here we go, Blue Team. Here we go.

Those are huge!

Those are huge. Melissa,
that fish is bigger than you are.

These boys are jumping for joy.

And I'm really trying to
change my energy level,

but I am pissed.

Today, I came out the gate strong.
Awesome job, Melissa.

But it doesn't matter,
because we're a team,

so we suck right now.

That a baby!

Oh, Chef.

I'm dying to find out who is
the Blue Team axe throwing champion.

-Right here, Chef.
-[Ramsay] Let's go, yes.

Oh, my God, Chef Ramsay is standing here
with the axes in his hand.

It just is a great feeling
to have him with us right now.

It's something the Blue Team
really needed as a team,

and this is our American dream.

[cheering]

Oh!

Oh!

-[all] Oh!
-sh*t.

[Ryan] Yes!

There's a special prize for the winner.
I'm not gonna say what.

-Thank you so much, Chef.
-Okay, be careful.

-I will be careful.
-Tommy, watch this man, okay?

-Make sure everyone's ten foot back.
-Yes, Chef.

-Ay!
-Ugh.

-Man, all right.
-Damn, I just got...

Hey, it's time for
a career change for this man.

Dahmere is absolutely
k*lling the game right now, man.

You can tell that the athleticism
is coming through,

and he's doing his thing.

That's a twofer.

-That's beautiful. Holy sh*t.
-Thank you.

-Holy sh*t.
-[laughs]

-Honestly, that's really impressive. Wow.
-Thank you.

I was not expecting Chef Christina to be
so impressed by my salmon cut.

I haven't been cooking for that long.

I don't have that much
experience with this.

[Raneisha] There you go.

-[Sammi] Yes.
-I'm like, Chef, trust yourself.

Just slide.

You know, some of the girls who are,

you know, filleting fish perfectly,
right off the bat, super fast.

And you know, I'm not keeping up.

Next side, go from head to tail

-and see how that is.
-Well, I was going head to tail.

I feel like I'm normally
the one that sets the tone.

And the fact that, like,

I'm the one who's lagging the most
right now isn't feeling good.

Some of us have never done this, and
some of us ain't did it in a long time.

-Yeah.
-Now that you're there...

And then just slide it right through.

Oh, f*ck. Why am I getting
so upset over a fish?

-What are you worried about?
-I don't know.

I'm just feeling
super unconfident right now.

The Red Team is probably...

they're probably up to their knees
in f*cking fish guts.

It took as long as they took
to freaking get to the challenge.

They probably are still cutting
that same piece of tuna.

Damn, that's the first shade
I've seen you throw.

-[laughs] I'm just saying.
-Good for you.

See, we're rubbing off.

[laughter]

You're welcome.

Yo. [laughs]

Do you guys think that today's punishment
is gonna f*ck them up for service?

Melissa looked furious.

Yeah, Melissa was angry.

-And she never does that.
-No.

I... No, I think that
three challenges in a row,

they're honestly at a point
where it's just like, it's gonna take...

it's gonna take literally one pinfall,
and everything is gonna fall apart.

Let's go, ladies.

-Let's go, Sammi!
-You pumped?

[narrator] After a day
of swimming upstream

filleting salmon for the Red Team,

and a day of hitting bullseyes
on the Blue Team,

both teams are now focused on getting
everything ready for tonight's service.

Lock in, guys.

Melissa, did you by the chance
have seen any garlic

when you was grabbing everything else?

-Melissa?
-I can find you some. Heard.

Okay, heard.

[Melissa] Honestly, I don't even
hear these girls right now.

To be here, trying to get ready
for dinner service

after losing the challenge this morning,
it's very disheartening.

Are you gonna sear 'em?

-No, I'm just seasoning.
-[Donya] Heard.

Trying to get you prepped to however
you wanna visually do it.

I don't know. It's all about chemistry.

And you know, people who jump ship

because their team is going down
is not worth my time, so...

Do your thing. You're doing it already.

This is no sisterhood.

Everybody thinks they're all-stars,
but we suck right now.

It's embarrassing.

So I say on the lamb,
anybody who's on that station,

as soon as you hear lamb,
put it in the oven.

Um, Melissa?

Frustrated, one thing,

but you stand there
completely disappointed, shut down.

Honestly, I don't think
it's good for the team.

I am dying to find out,
who is the number one axe thrower?

-Dahmere.
-Dahmere.

I said I got a little something for you...
an amazing Vitamix.

[all] Oh!

I just won a f*cking Vitamix. Like,
that's a very pricey piece of equipment.

I'm excited to use it. I can't wait.
Honestly, I can't.

I just added something
to my chef's collection.

And I'ma bust that bad boy out every day.

Tonight is a busy one.
I wanna see success.

You've had a taste of it.

Make sure it continues, yes?

-[all] Yes, Chef.
-Get on your stations.

-We're opening up. Let's go.
-[all] Yes, Chef.

[Jermaine] Practice one thing.

-Marino.
-Yes, Chef?

-Open Hell's Kitchen, please. Let's go.
-Subito.

[narrator] Once again, Hell's Kitchen
is the hottest place to be in Los Angeles.

[all] Cheers!

[narrator]
Orders are already being placed.

I think I'll have the pan-seared scallops.

I think I'll take the halibut today.

[narrator] And there's a variety
of celebrity faces

filling up the dining room...

There's Gordon. He's got good hair.

[narrator] ...including action movie
superstar Dolph Lundgren

at the Blue kitchen's Chef's Table.

-It's a pleasure having you both.
-Thanks, man.

-Good to see you.
-Thank you.

-Enjoy, yes?
-Thank you.

[narrator] And iconic pop singer
Paula Abdul dining in the Red.

If I get short tonight, I may need to
ask you to jump on the fish or the meat.

-[laughter]
-Let's do it, baby.

-No one's going home tonight.
-On order. Here we go.

Blue Team, four covers, table three, yeah?

-Two risotto, two scallops. Heard?
-[all] Yes, Chef.

Lobster is going down right now, Chef.

First table in, ladies. It's table five.

Two beet salad, two risotto, two scallops.

-[all] Yes, Chef.
-Let's go, ladies.

Dropping scallops.

Hey, before, check with her.
She's gotta be on time. Check with her.

What's your time on...
what's your time on app?

Two riso, six minutes.

-Stop racing ahead.
-Yes, Chef.

If you put them in four minutes ago,
hey, they'll be all overcooked.

Yes, Chef.

I've had a lot of ups and downs
with Raneisha and Sandra.

So I just want to make sure that we're
off to a good start, we're communicating,

and we're working together.

Scallop to the pass.

Riso right behind you.

Oh, boy.

Two riso on your right.

All of you, come here.

Uh-oh, something's happening.

Taste that, everybody.

What does that need? Anybody?

Shall I ask Paula?

-That is bland.
-Salt.

-Salt.
-[Raneisha] Salt.

Oh, God.

Hold on. Hold on. There's more.

There's greasy scallops. What is that?

Just touch how overcooked they are.

-And I stopped you...
-You did.

...putting them in too early.
Now, touch them. They're like rubber.

And then to top it off, we got raw...
raw lobster.

So I've got no idea what the f*ck
is happening right now.

Can we get a grip and lift it up
a little bit, shall we?

[all] Yes, Chef!

-And stop rushing.
-[all] Yes, Chef!

Stay focused, ladies.

Keep your head up.

Dinner service just started, and our team
is kinda dropping the ball at this point.

Let's go. Fire two new lobsters.

Two new?

Or, I mean, finish cooking yours.

[narrator] As the Red Team tries
to course correct after a rocky start...

What can I do to help you guys more?

-We just need to hear.
-Communicate. Hear you.

[narrator] ...the Blue Team is determined
to find success on their first table.

-How long?
-Three out.

Three out. Heard.
I'll meet you in the window.

[Jason]
Tonight, I am partnered with Dahmere.

He's gonna hold down salads
while I'm crushing the hot apps.

Tonight is our night to win.
We know we're gonna win.

Let's pound it out, boys.

-Yes, Chef.
-Yes.

Communicate, head down,
eyes up, mind open, ears wide,

and do our f*cking job.

Risotto is in the window. Behind, hot.

Lobster, please.

Lobster walking right now.

I'm working fish tonight with Brad,
and I'm feeling really good about it.

I've got the risotto beautifully done.
Where's the scallops?

Oh, sh*t.

They're coming out right now, Chef.

-I need two scallops right here.
-Two scallops.

No. I need all of 'em. I need ten.

Hey, you, you, you, you,
come here a minute.

-Jason, risotto, delicious.
-Thank you, Chef.

And why are we not dropping the scallops?

They're not even in the pan.

Did you know the risotto
was in the window?

-Yes, Chef.
-Oh, you did?

I saw the lobster tail go up, Chef.

-So... So...
-Chef, it was just com...

-Oh, f*ck off.
-Communication.

-Yes, Chef!
-Right now.

My risotto was in the window,
like, perfect eight minutes.

Why aren't the scallops ready?

Three out.

Figure it out, guys. Tighten the screws.

It's not a big deal.
You can't take it personal.

Get some new scallops going,
and let's get it out.

How is this possible?

We're gonna fix it, Chef.

Two riso, two scallops. How long?

Scallop walking in one minute.

-Apps walking in one.
-Heard.

Let's go, riso.

[Sandra] I'm looking down at my scallops.

They're f*cking sexy.
They're f*cking sexy.

They got some nice color on 'em.
They got some nice, sexy color.

I'm like, those are gonna look great.

Let's go, bitch.
Put 'em on this f*cking plate, man.

Scallops walking.

Look at the state of them.
Oh, f*cking hell's bells.

They're still overcooked.

-Hey, ladies?
-[all] Yes, Chef?

All of you, come here.

Oh, f*ck me, man.

Just look at those scallops,
and then just touch them.

How f*cking overcooked they are.

There's no f*cking way we're serving them.

I'll fire you another one, Chef.

[Ramsay] Risotto back.

This should be easy.
Don't overthink it, ladies.

Someone back her up on scallops.

Yeah, we're okay.
We're gonna drop it in one minute.

But I don't even care at this point.

Why should I have to suffer because
these girls are overcomplicating things?

It's not fair to me.

-Let's go. Six minutes.
-Keep the pan hot.

-Please, don't move it out the fire.
-I'm not.

[Raneisha] Thank you.

[narrator] While the Red diners
are hoping for a sign

that their appetizers
will soon be coming out...

Do you guys think we're gonna
get our appetizer?

-I don't think so.
-No.

[narrator] ...the Blue kitchen is still
working on their first ticket.

Walking.

-Lobs are walking. Ready with risotto?
-Yes, please. Walk.

All this food is in the window.
We have to go faster.

-Scallops?
-Scallops coming in 20.

Half the f*cking food missing.
I do not get it.

Fifteen seconds, Chef.

I don't understand
what's happening right now.

Scallops coming.

[Lundgren] Must burn a lot of calories
just running around like crazy.

So now he's bringing
the scallops for this table, okay?

Go, please. Go.

-So now he's bringing them.
-It won't happen again, Chef.

-Get a grip! Yes?
-Yes, Chef.

[Brad] Yes, Chef.

[narrator] With the Blue Team successfully

getting their first appetizers
out to hungry diners...

Mmm!

[narrator] The ladies in red
are hoping to do the same.

-Scallops walking. Lobster right behind.
-Lobster right behind.

Riso walking in 30 seconds.

Young lady, the scallops are here.

-Yes, Chef.
-Oh, boy.

Riso on your right, Chef.

Please be right.

[narrator] It's 30 minutes
into dinner service.

-Scallops walking. Lobster right behind.
-Lobster right behind.

[narrator] The fish station
has refired scallops for a third time.

Young lady, the scallops are here.

-Yes, Chef.
-Oh, boy.

[narrator] And the women are
desperately hoping

that this batch meets
Chef Ramsay's standards.

Riso on your right, Chef.

Oh, my God, my heart... my heart
is fluttering right now. Fluttering.

Please be right.

Nicely cooked, the scallops.

-Thank you, Chef.
-Thank you, Chef.

[Ramsay] Let's go.

That felt so good to hear.

Like, thank God.

We're making it
to dessert tonight, ladies.

-Let's go.
-Let's go, let's go.

[narrator] With both teams
now steadily pushing out appetizers...

Lobster walking.

Scallops walking.

This beats eating hot dogs for a living.

[narrator] Chef Ramsay is ready

-to move on to entrees.
-Six covers, table one.

Two salmon, two halibut,
two New York strip.

[all] Yes, Chef.

-Give me a time.
-[stammering]

-Eight minutes. Eight minutes.
-Eight, eight, eight.

It's four fish, two meats,
so drive it, fish.

No answer.

-It's four fish, two meat. Drive it, fish.
-Yes, Chef!

-Call back the ticket.
-Yes, Chef. Yes, Chef.

Call back the ticket. Call it.

Yes, Chef. Two salmon,
two halibut, one strip.

Young man, it's a six top.

-Two strip, two salmon, two halibut.
-Sorry.

Do it again.

-Two strip, two halibut, two salmon, Chef.
-That's right.

Eight minutes to the window.

-Eight minutes!
-Yes, Chef. Eight minutes.

I'm like, oi, oi, oi...
What the f*ck do I do?

I don't have a voice right now.
I'm freaking the f*ck out.

Two salmon, two halibut,
two strip, two minutes to window.

-Garnish in one, yeah?
-Garnish in one. Ready to rock.

Heard.

[narrator] As Brad tries to drive
the ticket in the Blue kitchen...

-What do you need?
-Oh, baby, we're good right now.

-You're good? All right.
-Yes, Chef.

[narrator] ...in the Red kitchen,
Chef Ramsay is f*ring...

-VIP Chef Table.
-Yes, Chef.

One halibut, two New York strip.

-Paula Abdul, yes?
-[all] Yes, Chef!

Let's go. Keep it going.

I'm gonna put this halibut in there.
We're gonna baste it.

-Just checking here for you.
-It's incredible.

-Everything is of your liking.
-Magnifique.

-You're happy?
-I'm happy.

-How many minutes do you need on VIP?
-I need four on the halibut.

It is so important to get
Paula Abdul's orders right.

She represents the American dream for me

because I grew up watching her
every single night.

So there's a lot of pressure for me
to take the lead right now.

-Walking halibut.
-Walking halibut. Heard.

How many minutes on the VIP?

Fish, I need you to talk to me.

-Halibut gone, ain't it?
-Yeah, halibut... VIP's halibut is gone.

New York strip?

I hope... I think they're good.

-Heard.
-Yeah, thank you.

-Walking New York strip.
-Heard.

-Behind.
-Sorry, guys.

By the cutting board.

Stop, Christina. They're undercooked.

-Come on, Leigh.
-Yes, Chef.

And now we're going
f*cking blue in the middle.

-Yes, Chef.
-Come on!

-Back in the pan.
-Yes, Chef.

Both of them. Let's go.

The fish needs to communicate better.

Baste them all together so you're sure
about every piece you're cooking here.

They were both trying to rush this ticket.

So instead of resting the steak,

I just kinda kept cranking up
that heat, and it didn't work.

Service, please.

Sorry about that steak, guys.

-It's okay. Let's just keep going.
-Yeah.

[narrator] Despite Leigh's hiccup
on the Chef's Table order,

the VIP guests feel it was worth the wait.

I love halibut, too.

But I've never tasted it like this.

Mine's heaven.

[narrator] In the Blue kitchen,
Chef Ramsay is still waiting for...

Two halibut, two salmon
walking to the pass.

-[Ramsay] Right now!
-Two New York.

[Ramsay] How's that halibut?

He got it right. Beautifully cooked.

-The f*cking halibut's beautifully cooked.
-Yes, Chef!

Let's go! Pick it up!

I lost my voice. [speaking Spanish]

But I found my voice.

Oh, man.

Yeah, they're doing good. Whoo!

Fire now, two halibut, two Wellington.

-[both] Yes, Chef.
-Call it back.

Two halibut, two Wellington.
How long on Wellies?

-Nine minutes on Wellingtons.
-Nine minutes on Wellies.

-I don't want them overcooked.
-I got you. Eight minutes, Chef.

These gotta be covered in foil
a little bit and tented,

because it's gonna get dark.

Jermaine is wrapping
the Wellington with aluminum foil.

I'm really concerned on giving Chef Ramsay
overcooked Wellingtons.

So I hope he knows what he's doing.

Two Wellie, two halibut. Five minutes.

-Five minutes, heard, Brad.
-Thank you.

On this pick, it's one halibut,
one salmon, one Wellie, one strip.

[all] Heard!

I am on garnish tonight.

I am looking at the tickets,
communicating with my team.

Good job, girls. Keep it up.

I want the Blue Team to hear us.
I want Chef Ramsay to hear us.

So one salmon, one halibut,
one lamb, one Wellington.

[all] Heard.

Three minutes, two strip,
two Wellington, two salmon.

-[all] Heard!
-Push it, ladies.

So I'm gonna need two
salmon garnishes in six minutes.

Already ready.

-FYI, well done. Good.
-Thank you, Chef.

Sammi on garnish tonight,
she's doing a great job.

Counting it down, ladies.
Let's count it down.

-[all] Heard.
-Come on, Sammi!

Y'all are k*lling me over here.

But Melissa, I feel she's just, like,

fading into the darkness, like,
disappearing into the abyss.

Melissa, can you confirm?

Two lamb, two strip, two halibut.

No. We just did two halibut
and two New York strip.

The next pick that we're doing now
is two halibut, one New York strip.

Those fries aren't cooked yet,
though, right?

-No, we're gonna flash again.
-They look cooked.

No, we don't double flash fries.

I am already shining on challenges.

I don't need to have a gold star
inside this kitchen.

-How long?
-90 seconds, Chef.

Where's garnish at? I need garnish up.

If they're 90 seconds out,
I need you in the window now.

Coming. Chef Ramsay knows what's up.

Why have you got that garnish
here like that?

-Sit it on the side here.
-Yes, Chef.

Do not turn it on.

-Keep it nice and warm in there.
-Yes, Chef.

[Carmen] I'm not hearing Melissa at all.

I said earlier, some butter in there.

-Yes, Chef.
-Otherwise, they just go dry in there.

You know, Chef Ramsay and Chef Christina
are looking for a leader

and someone that can
be vocal in the kitchen.

So if you can't do that,
then you shouldn't be here.

-Grab that, bring that, yes. Okay.
-It's not ready.

I'm confident in my ability to produce
and put out really good food.

Halibut walking, Chef.

Walking Wellingtons, yes?

Go, go, go.

-Wellie walking right now.
-Oh, f*ck.

Use that one.

No, that one's not good.
That one's not good.

-Dude, that is not...
-No, no, no, no, no.

Johnathan, I ain't got time for this.
I've worked this station before.

I know what I'm doing.

-What's happening?
-What's going on, guys?

-There it is.
-No, that's not it.

-These are cooked.
-This one.

-Take it up.
-Go, go, go.

Come on, someone. Just bring something up.

Cut...

The cut on this is a little messed up,
but it's cooked well.

Leave me alone. Leave me alone.

-That's overcooked now.
-It's overcooked.

Young man?

Hey, Blue Team,
just come down here a minute.

Abuelita, please, help. God?

Ooh.

That's overcooked, and that's undercooked.
I mean, we're not... we're not...

Hey, overcooked, undercooked.

It's still cold in the middle.

You're just getting overexcited.

f*ck off outside.
Go and see the Hell's Kitchen sign.

Take a big, deep breath
of fresh air and f*ck off.

-Yes, Chef.
-Let's go.

-Get your sh*t together. Okay?
-[all] Yes, Chef.

The Wellington are overcooked.

I saw you wrapped them in foil,
which is the worst thing you can do.

-The worst thing you can ever do.
-Don't do that. Yes, Chef.

Raw halibut,
overcooked f*cking Wellington.

f*ck yourselves.

[narrator] It's an hour and a half
into dinner service.

-And in the Blue kitchen...
-Get your sh*t together.

-[all] Yes, Chef.
-Okay?

The Wellington are overcooked.

I saw you wrapped them in foil,
which is the worst thing you can do.

-Don't do that.
-The worst thing you can ever do.

-Yes, Chef.
-f*ck yourselves.

[narrator] ...the meat and fish stations
have brought the kitchen

to a screeching halt.

Get two new halibut down.

I've never taught any of you
to wrap a Wellington up in tinfoil.

-Yes, Chef. Yes.
-Ever!

These gotta be covered in foil
a little bit and tented,

because it's gonna get dark.

-Don't wrap the Wellington.
-I heard you.

-I heard him, too.
-Okay.

I'm coming back! I'm coming back!

-Let's go, man!
-I'm coming.

We're gonna bounce back.
I know Brad can do it.

He's out there jogging
through the dining room.

Excuse me. Excuse me.

He got his steam out.

I'm gonna help Jermaine get this out.

We're gonna slice these Wellies perfectly.

We're refiring the ticket.

-Refire, okay.
-Yes, do you want to run it?

No, no, no.

-Okay.
-Yeah, run it, run it, run it.

We've gotta get ahead now.

Drop a couple more
and let's f*cking go, boys.

-How long, Blue Team?
-Walking Wellie.

-Walking Wellie.
-You walking?

Okay, okay.

Halibut walking to the pass, Chef.

Everything in service,
all about the bounce back.

You may start off poorly,
but as long as you bounce back

and finish strong, there's a good chance
you're gonna be all right.

Nicely cooked, the Wellington.
Nicely cooked, the halibut.

Yes, Chef.

[narrator] It appears as though both
kitchens have finally hit their stride.

Walking two Wellington, Chef.

Behind, walking halibut.

Go, go, go, finish up these.

[patrons chattering]

Oh, yum.

Oh, wow. That's a big steak you got.

-A big one, yeah.
-Thank you.

[narrator] Both brigades are now hoping
to complete service mistake-free.

How long for that last table?

[Raneisha] See, it's burnt.

-What's wrong with it?
-That's burnt.

Show me the salmon, please.

Just bring the salmon down here.

How did... How do we stand over
something like that and burn that?

Help me to understand the madness here.

How does that happen?

How is this possible?

-It's disappointing, Chef.
-sh*t.

Five and a half, yeah?

-Five and a half, yes.
-I really don't know

why fish station is having a hard time
finishing out service strong.

So we can get one of them
and we can pull them back.

That's what I'm gonna do.

I'm not feeling so good
about how we're ending this out.

Walking New York strip. Walking Wellie.

Salmon walking.

Behind.

Apologize for that wait.

Go.

-Holy smokes.
-Yeah.

Wow!

-It's really good, isn't it?
-The chimichurri...

I know, right?

What a bizarre evening.

Yes, we did complete service,

but all of you must know deep down inside,
we can do much better.

-Yes or no?
-[all] Yes, Chef!

So that was a tough time for me
to decide on which kitchen won,

but the winning team tonight...

is the Blue Team.

-Congratulations.
-[all] Thank you, Chef.

Red Team, from apps to fish to meat,
it was a disaster.

I want you to come back to me with
the two weakest individuals on your team.

-Is that clear?
-[all] Yes, Chef.

Now, get out of here.

It sucks, because I feel like every time
we take three steps forward,

we take five back.

I will just say, tonight, uh,
I felt like fish was the weakest.

Um, the salmon that was burnt, there was
no f*cking way I was going to put that up.

So I started that again.

I don't think I'm the weakest chef
on the Red Team.

The salmon was burnt, totally my fault.
I'll own that sh*t all day.

But I feel like I k*lled it
on fish tonight.

But how many times
did the scallops have to be refired?

Just twice or three times?

No, it was once.
No, don't do that. It was once.

I am not the weakest chef on the Red Team.
I get up in there. I bust my ass.

I learn from my mistakes.

I don't let it get me down.
I grow from it.

We need to focus on someone who
gets flustered when he yells at us

and, like, maybe is less confident.

I only know one person that just
in the top... just my top of my head.

I'd just pick Melissa, you know.

I just felt like Sammi shouldn't have to
run the station alone.

I don't feel like she feels confident.

I feel like she pushed Sammi up
to the front a lot of times.

If y'all feel like y'all
can win the great race,

call my name, I don't care.

I give positivity.
I bring it each and every time.

Like, if I don't feel confident
in a station,

I'm not gonna put myself up there
and put my team down.

I'm gonna support as best I can,
and that's a real leader,

knowing your strengths and weaknesses

and not always trying to
put yourself in the front.

It's about keeping your team together.

If you look down
and you look disappointed,

guarantee, your whole team
is gonna feel that same way.

I just feel like, um,
Melissa is just a Debbie Downer.

All right, let's vote for Sandra.
Anyone wanna vote for Sandra?

Melissa?

Raneisha?

-Has everyone voted twice?
-[all] Yes.

So is it tied three ways?

[sighs] Men, well done.

[all] Thank you, Chef.

When a kitchen folds like that,

that tells me there are
still issues in that team.

That was a big shock for me.

So when you make a mistake,
do you stop talking,

or should you talk more?

[all] Talk more.

Yeah, someone pick up the reins.
It's called a leader.

[all] Yes, Chef.

Have you reached a consensus?

-[all] Yes, Chef.
-Good.

Atoye, Red Team's first nominee and why.

Our first nominee, Chef, was Sandra.

We had some hiccups on our fish.

The second nominee and why.

Second nominee, Chef...

is Melissa.

We have to make a consensus
of all dinner services

and things in its entirety.

Sandra, Melissa, step forward, please.

Oh, dear.

Sandra, your team have given up on you.

Why?

I'd like to know as well.

Why should you stay in Hell's Kitchen?

I've improved since I've been here.

I have a lot of toughness,
drive, motivation.

I feel I am a good leader.

I know I've got a lot more
in me, absolutely.

Melissa, why should you stay
in Hell's Kitchen?

I came into Hell's Kitchen,
and I made a name for myself.

And I've consistently pushed
and grown as a person

and with my team in spite of.

So you believe in your team,
but your team don't believe in you?

Yes, Chef.

One of the toughest decisions
I've had to make so far.

My decision is...

Melissa.

Young lady, let me tell you something, um...

Just like the Red Team faded tonight,
you're disappearing.

The competition's leaving you behind.

I need all of you
to start stepping up quickly.

-You're not doing that.
-Yes, Chef.

Please give me your jacket.

-Thank you.
-Thank you, Chef.

-Good night.
-Thank you.

The team definitely let me down.

I've been very consistent on pushing
no matter what station I was on.

I believe they put me up
because I was a thr*at.

All my strengths were always consistent.

I wish I could live to fight another day
here in Hell's Kitchen

just to show my team that I was a great
asset to them in spite of how they feel.

The big question for me every night
upstairs in my office is

who is gonna start emerging
as a front-runner?

Good night.

[Sandra] To my defense,
the two eliminations that I've been up,

I feel I did not deserve, 100%.

It feels good to be here still,
but the drama, the constant f*cking drama,

like, I'm tired of it.

-[Raneisha] This sh*t tough as f*ck.
-[Atoye] Next week, it's gonna get harder.

[Donya] To see Melissa go,

I felt like the choice for the betterment
of the team I think was made right.

Her leaving was like a reality check.

Like, stop playing the background.
Stop playing it safe.

And just really step up.

It's either y'all are gonna catch up,
or you're gonna get left behind.

Gents, you waiting for a f*cking broom?

Come on!

I'm just eating popcorn, watching
the girls pick each other apart right now.

It's insane to watch.
You're supposed to be a team,

and I feel like none of them
respect each other.

I can't imagine the guys acting like that.

Melissa's drive completely disappeared.

So I made her disappear
from this competition.

[narrator] Next time on
Hell's Kitchen: The American Dream...

-We got a goal post.
-[laughter]

[Ramsay laughs] Come on!

[narrator] After Jason gets ridiculed
by the chefs on both teams...

Jason sucks.

[narrator] ...will he look to sabotage
even his own brigade?

Way too heavy on the char.

-Did you want that much color on there?
-Yes, Chef.

-[Jermaine] It was a very snake-like move.
-f*ck this guy.

-Drop the scallops.
-I'm dropping them now.

Oh, my f*cking hell.

[narrator] And is the Red Team...

-Oh, sh*t.
-[narrator] ...at a breaking point?

This cannot f*cking continue.

I'm really about to say
just f*ck this sh*t.

[narrator] Get ready for
an in-your-face episode...

When I f*cking talk to you,
look at me in the eyes.

[narrator] ...on the next Hell's Kitchen.
