This looks like a paste
as opposed to a sauce.

So you can see it's overcooked.

amazing rock quarry.

This place is one of the biggest
producers of sand in the entire country.

I needed some sand in my diet.

...It's another expl*sive team
challenge for the top 13 cooks.


A dainty little salad, guys,
today, is not gonna cut it.

- Is there seasoning on these things?
- I don't even [ bleep ] know.

- Oh, my god.
- Rebecka: Horacio, you are gonna derail us.

Your attitude is
a reality check.

Two need to be on
the burgers! It's raw!

- Yes, sir.

Being team captain in
the last team challenge,


It was stressful,
it was intense.

- Our team lost.

I needed some sand in my diet.

And so I'm definitely a little worried
about another team challenge.

Horacio: Okay. Here they are.

- Wow, is that joe? Aarón?
- Whoa!

- Hey!

- Perfect.
- Are you guys ready to put in a hard day's work?

generations of the same family.

We're gonna help celebrate
their incredible 60th anniversary.

you're gonna have to cook a hearty lunch

For over 100 hard-working
men and women

- In this beautiful quarry.
- Oh, wow. A hundred.

Guys,
think about who you're feeding today.

Think about what
they do all day here.

They're out in the
sun and the wind,

Under the elements
digging rocks,

Moving rocks, exploding rocks.

A dainty little salad, guys, today,
is not gonna cut it in this environment.

Now, listen carefully.

The good news is
that the winning team

Will be safe from elimination.

But, sadly, someone from the
losing team will be going home.

Now, there's 13 of you left,

And today we want
to switch things up

From the last team challenge.

So,
with this season being all about ages,

Let's try pairing the
youngest with the oldest.

- Oh!
- So, gen z and baby boomers,

- You're gonna be the blue team.
- Very nice!

- So, millennials and gen x,

You guys are gonna
be the red team.

Come up and get your aprons,

- Red team.
- Boomers got the reds.

Murt: We get paired
with the boomers,


And I'm a little worried
because they have

Some of the slower people on their team,
you know?

They have horacio,
they have warren.


But what we do have going for
us is we have one more person.

You know,
I'm gonna be optimistic.


Let's try to pull out a w today.

Gordon: Right,
we've got our teams.

But we're missing
one thing. Captains.

Joe: And don't forget,
the captain of the wining team

Will get a huge advantage
in the next challenge.

Right, both teams,
take a moment and talk it over

- All: Rebecka!
- Rebecka: All right.

This is the
environments I thrive in.

Yeah, absolutely. Absolutely.

I think kamay is trying to
create doubt within myself

About whether or not
I can lead this group.

- But I'm not gonna fall for that.
- Aye, aye, captain.

- I own and run my own marketing agency,

So I'm very used to delegating.

And I know it's a huge risk,
taking the captain position.


But I'm very determined
to lead our team to victory.

Blue team. Captain. Who is it,
please?

- We chose rebecka.
- You chose rebecka.

- It's gonna be me today.

- Arthur, wow.
- Aarón: Wow.

Now, today we've already
chosen the star of your dish.

That's right, one team will
have to make a stunning burger.

The other team, an incredible,
delicious grilled chicken sandwich.

Now, rebecka,
even though you have the immunity pin,

You will still be cooking
in the blue team today,

And you get to decide which
dish your team will be cooking.

Over here. Okay,
so this is what I'm thinking.

- Take the hamburger.
- Well, no, because hamburgers,

If they're not cooked correctly,

They will be punted
across the room.

Okay,
so this is what I'm thinking.

Chicken with, like,
really nice slaw.

- Are you comfortable with the grill?
- I am okay with the grill.

Protein is such an important
factor in winning a team challenge.

We have 100 people to feed.

We are dealing with
sideways sandy wind,

So I'm thinking
chicken is the best bet.


I can just see chef ramsay
tossing a burger across the quarry.

- ...Start. Okay? All right.
- Okay, I feel good about that.

Right, rebecka,
obviously a game-changing decision.

- Yep.
- What are you and the blue team

Deciding to cook today?

We'll be doing chicken thighs.

- Ooh!
- Wow.

Arthur seems to be pretty
happy with getting the burger.

So do a couple of the
other team members,

But I'm not really
happy about this


Because we have to
form over 100 patties.


Where if you have chicken,
it's already portioned out for you.

So that means, blue team,

You're making a
delicious chicken sandwich.

- Yep.
- And red team, obviously,

An amazing, delicious burger.

So how you pull those
off is up to you guys.

We want a sandwich, a side,
and a beautiful sauce.

Okay, guys,
our guests will be clocking out

For their lunch break
in just over an hour.

We need to see a sample
plate in about 30 minutes.

So, you need to work fast.

And remember,
somebody from the losing team

Will be eliminated
today inside this quarry.

- Right, you guys ready?

we got the chicken sandwich.

What type of flavors
do you want to put on?

- Asian style.

We are in california. This
is all about mexican spices.

- I like a nice--

Southwestern flavor.

We're gonna do a
dry rub on the chicken.

- Oh, I don't think it's a good idea.

- The dry one-- - my concern
is burned sugar on your chicken.

So let's maybe give them a really good
adobo sauce. Right? Wouldn't that be great?

- I agree.
- Maybe we could do, like, a corn salsa.

Let's talk about our side dish.

- What if we did, like, a mac salad?
- Yeah, that would be nice. Yep.

So, warren and horacio,
you guys are gonna be doing the chicken.

Murt and hallie,
you're gonna work on the corn salsa.

- Got it.
- Becca, macaroni salad.

And then at the pass,
I'm gonna need becca, adam, and hallie.

- Perfect.
- Got it.

- Okay, burger, what do you guys think?
- Let's do swiss.

- Let's do swiss? All right, I love that.
- Are we doing bacon?

Yeah, we can throw some
bacon on there. That's a good idea.

- Really crispy bacon, guys.
- And we're cooking the bacon in the oven, correct?

- Bacon's gotta go in the oven.
- Yeah.

- How about the sauce?
- What about a barbecue sauce?

- Barbecue and swiss, though?
- Yeah.

- Chipotle?
- Chipotle.

- Let's do a chipotle aioli.

We gotta have a
traditional coleslaw.

comfortable making the chipotle aioli?

Jeet and I can work on the slaw

- You know what you're doing?

- Wow, what an amazing setting.
- This is extreme.

It's hot, it's windy,
it's dusty.

- Aarón: Yeah, I love it.
- This is one of the most difficult cooks

- So far in this competition.
- Here are you bun options.

- They're large hawaiian.
- Brioche.

Brioche? You're sure? Okay.

- We gonna toast both sides?
- Yes.

So, red team,
we've got the millennials and gen x.

It's an interesting combination,
this one, right?

'90s and the 2000s

Are their big cultural
reference point.

- It should be pretty unified.
- Chef?

- Yes.
- Brioche is not sliced.

- Hawaiian might be pre-sliced.
- Slice the brioche.

- Slicing 100?
- Yeah, yeah, yeah. I'll help you with that.

You don't have time to help,
chef.

And I'm glad that the captain
of the red team has stepped up.

- Yeah.
- Arthur, he runs and owns his own marketing agency.

And so it's about time he
started using that experience.

Remember that arthur and the
red team did not pick the hamburger.

I think it's a gift.

If there's one thing these workers
would love to devour after their shift,

A burger will go down way better,
I think, than a grilled chicken sandwich.

- Do you wanna use the red chilies, hallie, or no?
- Both: Yes.

- Chop 'em up. Put 'em in there.
- So, blue team, we've got gen z and the boomers, okay?

- So we got the old and the new.
- Grandparents and grandkids.

- Yeah, that's right. Yeah.

Horacio, make sure you-- I
need chicken only in 20 minutes.

Don't cook it too soon
or it's gonna get dry.

I think rebecka is kind of like the mature,
leading voice.

She's obviously had some
success in some of the challenges.

So I think all the blue
team's really looking up to her.

- Yeah, good point.
- Okay, let's see now.

- Get in there.
- Horacio, you can wait on that chicken.

It does not need to be on right
now. How long you gonna cook it for?

- I'm gonna cook this one 10 minutes.
- It needs 8-12 minutes.

- And how long's it gonna rest?
- Three minutes is more than enough.

I don't think you
understand what I'm saying.

Joe: Rebecka did not
pick the hamburger.

- I think that's a bit of a mistake on rebecka's side.
- Yeah.

Because she's got the
youngest generation in her team.

- These youngsters know how to absolutely elevate a burger.
- Yeah.

- [ alarm beeping ] - rebecka: Whose

- Horacio, is that your timer?

I think our team
is really strong.

I would say that the
weakest link is the unknown.

And that's horacio. He's
always the unknown.

Horacio, you need to be testing
these every single time, okay?

Horacio just is a ball of fire.

You never know which
way he's gonna go

Once he gets
dedicated to an idea,


And so that could
potentially derail us.

- All in the range of 180.
- Okay, that's overcooked.

No, it's moist and it's perfect.

All right, well,
we'll find out what gordon says about it.

- We will find out.
- I actually prefer having less in my team.

I think the red team's got a big
advantage here. They're down to six.

I disagree, chef,
I'm sorry. If you have an extra person,

- That's the difference between another garnish.

Aarón: That's the difference
between somebody jumping on the grill

And helping out and getting
everything done efficiently.

- Arthur?
- Yes? Okay, hold on.

While I commend arthur for
stepping up as team captain...

I think this needs a little
bit of-- a little bit of sugar.

I'm beginning to see that
he's just not a confident leader.

- What do you think?

We're doing a chipotle
bacon and swiss burger.

We wanted to keep
it fresh and light.

We know that the aioli is
gonna really elevate this burger.

Gotcha. If you're gonna
put a slaw on there,

Just make sure it's
an exceptional slaw.

- How are you splitting the team up?

- Who's doing what?
- We have mike, myself, and kamay on proteins.

We have kimberly
and jeet on the slaw.

- Gordon: Right.

so can you give

Some insight to joe and I
what you're doing right now?

We are making a southwestern
style chicken thigh burger

With a macaroni salad,
and then our sauce is an adobo mayonnaise.

- Joe: Cool.
- Give us some insight of who's doing what.

Rebecka: Adam is on buns. Horacio and
warren are manning the chicken station.

Murt and hallie are
making a corn salsa,

And becca is taking care
of the macaroni salad.

- Thighs are very tricky.
- Thighs are tricky,

And I'm really trying
to rein horacio in.

- He's kind of going gangbusters,
and so-- - is his idea your idea?

Not really. I mean,
I really wanted to dry rub--

- So did you concede to his idea?
- Um, in a way.

Rebecka, whose idea was it
to take the chicken skin off?

- That was a joint effort.
- You're taking away

An essential part of
the crunchy goodness.

It's the crunchy-crunchy, yes.

Is horacio the only
person manning the grill?

No, actually,
it's horacio and warren together.

- Yeah.
- So, horacio, this is your recipe, basically?

- This is your idea? In the rub?

And they're doing it with a slaw,

It's funny because arthur
has got all these great ideas,

But it's not translating to the
team because he's not talking much.

- Well, who is leading the team then?

and then you lettuce.

- Hallie, you good? You need anything?
- I'm good.

The chicken is better and
we're gonna win this thing!

So the blue team,
they picked the chicken thigh.

Then they all decided to take the
skin off. What do you think about that?

- Well, the skin protects it.
- It also gives it flavor.

- Gordon: Amazing flavor.
- This is not cooked.

- It's raw right there.
- Rebecka and horacio

Are disagreeing on how to
cook the chicken. It's his recipe.

He says he's taking
responsibility for the chicken.

- Wow.
- We're ready.

- All right, good. I'm going back to prepping.
- Okay, go.

- Blue team.
- Yes?

Rebecka,
please describe the dish, please.

So we made a grilled chicken
southwestern sandwich,

Corn salsa on the top,

And then we have a
mac and cheese salad.

- Is that how the corn goes in there? Wow.
- It's a bit unusual.

- Yeah.
- That's all gonna drop out when you pick it up.

It needs some form
of freshness in there,

Because the chicken's
on the verge of being dry.

And when you pick up that
bun and all the corn is loose,

The first thing that happens to the corn,
it just--

- Goes out.
- Yeah, I mean, there's one option.

You could take some
of that corn and put it

Into the macaroni salad and
make that more interesting

- And then find another garnish on that.
- Okay.

Look, firstly, I would do a
little slaw. Something lighter.

Maybe a vinegar,
not a mayonnaise.

- Exactly.
- You know what's missing

On that chicken sandwich for me?

- What's that?
- Is crispy chicken skin.

- Yeah, I know.
- Are they brushing it while they're cooking it?

- No, they're not. Dry rub, no skin.
- There's no skin on there?

- Is there a-- a bit of a-- - there's
some tension between me and horacio.

- He wants it his way right now.

- I am. Absolutely.

- That chicken is dry.

You would think that there
would be some butting of heads

Between gen z and the baby
boomers based on the age difference.

But, actually,
it's within the baby boomers,

By way of horacio challenging the captain,
who's rebecka.

Well, rebecka's a strong
personality and a good cook.

I can understand why the
zers will listen to her commands.

- Horacio just doesn't care.
- No.

- Yeah.
- He sees himself as her equal.

Do we have a
weather hat protection?

[ chuckling ] this thing is too hot,
man!

- It's a grill, you donut!
- Maybe you're too old!

- You ready, arthur?
- We're ready.

Let's go, bud. Right,
describe that, please.

This is a chipotle
bacon and swiss burger

- With a side of cabbage slaw.
- I think the slaw looks good.

I like the fact that
it's not overdressed.

Maybe some herbs, some scallion,

Something that's
green to lift it up.

- That is absolutely spot-on.
- Perfect.

- Cooked real beautiful, yeah.
- Really beautifully spot-on.

This burger's very good. Great seasoning,
bacon's nice, the burger's moist.

It's actually pretty close
to perfect for a burger.

- Amazing.
- Gordon: Wow.

I think if you can keep
the burgers moist like that,

You have a home run.

The problem is the coleslaw.

It's too raw.

It needs to be macerated more.

You need to take the cabbage,

Maybe break it down
with some vinegar.

You've got a winning dish here,
okay?

We're gonna go ahead
now and salt the cabbage,

Add a little bit of the apple
cider vinegar, and let it sit.

- Okay, go.
- What's this for? What's that for?

- For the chicken.
- Taste it.

And you taste that as well,
please.

- [ whistles ]

- Do we want to lose this?

This thing is
inedible. It is so salty.

We're about to throw that over the chicken,
then grill it.

So we're about to lose
before we even start.

- Now get a grip.

Horacio is just
messing up left and right.

First it was the chicken. Now
it's this crazy marinade he made.

- It was not salty.
- It's salty.

- This was not salty.
- If horacio doesn't get it together,

- We are a sinking ship.
- I don't know!

Rebecka,
we can correct this sauce.

I'm going to fix it,
so I need you to go

And get your chicken ready.

Without the sauce,
I can do nothing.

No, you can start some chicken,

And we can brush it on
as soon as I get it made.

- So start chicken. We're not gonna have enough.

For the slaw, is the sugar,
the mayo-- the creaminess is good?

Everything was good, except we needed to
break down the cabbage a little bit more.

- Perfect.
- The kitchen is starting to get disorganized

Because we're behind
on a lot of our components.

Arthur? We're gonna
have a timing issue here

Because once I get on the grill,
somebody's gotta be making patties.

Yeah, yeah. I'm gonna do
that. I'm gonna be doing that.

The same exact way I've been doing them,
though.

Although the burger only
takes five minutes to cook,


We have to form them
into 100 equal portions,

So that's gonna
take a long time.

- We cannot get behind on burgers.
- Yeah. Yeah.

Yeah, this one's a little
wetter than the other one.

- It does seem a little wetter.
- Let's mix it all together.

I'm looking at the team that's in charge
of slaw, and they're going really slow.

Jeet, I need you guys to start
putting the slaw together right now.

How many minutes do we have,
arthur, till you need those?

- You got ten minutes.
- Yeah, we have enough for that. We have enough.

- Burgers are on? Okay.

Here, taste this. Careful,
it's hot.

Whew! That's
awesome. I really like it.
