[Mellisa] Okay, ante up.

One to play. All bets are final.

-[Cedrick] Hit me.

-Ooh.

[Juan] Forward.

-[gasps] Oh no.

-Oh, you lost. You're bust.

-[laughs]

-[Cedrick laughs] Juan!

-[Mellisa] Okay, Tyricia, flip them over.

-[Juan] She's confident.

-And twenty-one.

-[Juan] Uh-oh. I knew it.

-Tyricia wins.

-Yeah!

[Mellisa] She's a winner, winner,

chicken dinner.

I would've had a better chance at being

a winner, winner, chicken dinner

if I hadn't gone bust with my egg.

[Mellisa] Coming off the ooze challenge,

I decided to take a pretty big risk,

and it just didn't pay off.

I was pretty frustrated.

I know to let go of that stress

'cause that's not gonna help me

get there for sure. [laughs]

Yeah, I wouldn't think about that.

I just think about literally having fun.

Just do what I like to do.

No, no, you're just vocal

with your having fun.

-Yeah.

-[Tyricia] I don't see the lie there.

[all laughing]

So here's a question.

If you guys could open up a business

with any class member, who would it be?

Everybody has something,

but I'll pick Tyricia.

-[Tyricia scoffs]

-[Mellisa] That's a big surprise.

I would pick Tyricia, Juan, and Thiago.

Strong team.

They would make beautiful things,

and I could, you know,

manage everything, just go home.

-[all laughing]

-[Mellisa] Mm-hmm.

With anybody in the classroom?

-[Cedrick] Anybody.

-Amaury.

But what about your classmates?

[Mellisa] Oh, my classmates?

[Cedrick] Mm.

I know what it takes to run a business,

and most of these people,

other than Chef, they don't.

It would maybe be an easy question

for somebody else to answer,

but for someone who's run

every aspect of one for five years…

The amount of love that we put

into that to walk away was hard.

-[heartfelt music playing]

-Really hard.

Financially, it was such a bust.

It was our money.

There was no investor behind us.

We had to give up our condo in Portland,

and then we were…

extremely lucky

to have family who let us move in,

which was, like,

really humbling to be an adult doing that.

[emotionally] Um…

[clicks tongue] Yeah.

[softly] Yeah.

It's scary to think

about eventually saving enough

to try to open something else.

The 50,000 and everything like that,

it's definitely an opportunity to reset.

The timing couldn't be better,

like, from a personal level.

I… I really need to win.

Oh my God. God jam it. [grunts]

-[Tyricia crackling]

-[laughing]

You know, you might win now,

but we'll see about tomorrow.

[pop music playing]

[chuckling]

Oh boy.

-It's just hanging there. It's chocolate.

-Oh, hell no.

-[students laughing]

-[Stephanie] That's incredible.

There's gotta be some metal there

supporting that thing, right?

I don't know how it's hanging there.

There's no way that thing is chocolate.

I… I can't…

[Stephanie] Oh my.

-How is anything holding it up?

-[Daniel] I'm stressed about it already.

He is the master of illusion. [laughing]

[Amaury] Hey, guys.

-[Tyricia] Hi, Chef.

-How are you today?

[Tyricia sighs loudly]

[students laughing]

-[Amaury] What do you think?

-Pretty amazing.

If you believe there is metal inside,

you're out of your mind.

-I told y'all. I told you.

-[Thiago] It's all chocolate? Everything?

-That's the only metal part.

-[Thiago] Oh, okay, that's it.

Nothing inside is metal.

A hundred percent chocolate.

So we're gonna find today

how we can defy gravity…

-[Cedrick] Gravity? Uh-oh.

-Oh, ha!

…using just the beauty

of what chocolate is, the strength.

[Juan] When you say defying gravity,

do we have to hang it

from the ceiling? [laughing]

[Amaury] You're gonna have to hang it

from the ceiling. Hmm.

-[clears throat, laughs]

-[students laughing]

[chuckling] I have never hung anything

from the ceiling,

especially chocolate.

The only things I hang

is just my plants at my house. [laughs]

[Amaury] This is one

of my favorite techniques.

We're going to glue those two together.

Because of the way

you're going to laminate,

you're going to get multiple strength.

One strength,

two strength, and then another one here.

So that it's set

from three different angles.

Much, much stronger than any other piece.

We're going to score them

quite heavily, actually.

[heat g*n blowing]

We're going to warm them evenly

with the heat g*n,

apply tempered chocolate,

and then create our little sandwich.

-And apply a lot of pressure on it.

-[Thiago] I love it.

And you're gonna do that

every single step of the way.

If I miscalculate or misapply

one technique to any of those elements,

the whole thing collapses.

[softy] Oh God.

It's like having

a weak link in your chain, right?

[chuckles]

Laminating chocolate,

that's crazy, and I couldn't believe,

like, that was creating something

that's strong and light at the same time.

He definitely brought the…

the knowledge. Yeah.

[exciting music plays]

You're going to have 16 hours

to design something

that hangs from the ceiling.

-[Tyricia] O-M-G.

-Oh yes.

We will have four different groups of two.

Four different showpieces.

Oh my God.

You did not expect that. Ah.

It was a curveball for all of us.

Now we're wrapping our minds around like,

"Oh my gosh, how are we gonna do this

with only two people?"

Let's choose the teams.

Juan, I'm gonna let you pick one person.

-I'm gonna go with Daniel.

-Thank you.

Tyricia?

-Um, I'm gonna pick Stephanie.

-[softly] Oh my gosh!

[Tyricia] Stephanie's good.

I like her personality.

[chuckles] Definitely do not let

the blond Cali girl fool you.

Like, she… she's smart,

she knows what she's doing,

and she's determined.

[Amaury] Mellisa?

I really don't like to see you

having the lowest grade.

However, I know why you had that.

Because you took the highest risk.

So because of that,

I'm gonna let you pick someone.

-Thiago.

-[Amaury] Thiago.

We're gonna have Amanda

and Cedrick forming a group as well.

-We got this. We got this. We got this.

-No, we can't overthink. Gotta have fun.

Are you ready?

-[students] Yes, Chef.

-Please, begin.

-[dramatic music playing]

-[Amanda] Go, go, go.

[Daniel] That's what I was about to ask.

I was about to ask…

[Juan] So we gotta grab what we need.

So, our thoughts is…

[Stephanie] Let's just

take some deep breaths.

-My God. It felt so good. We're relaxed.

-[laughing]

-We're gonna be Zen and chill.

-Oh gosh. Okay.

Okay, okay. What are we thinking?

What are we thinking?

I was thinking, like,

a hummingbird feeder.

[Thiago] I like that.

A lot of room for structure, support.

You know, like,

I think that'd be cool. A lot of details.

Yep. Could have a lot of details.

[Thiago] I didn't get to work

with Mellisa yet. Super happy about it.

I know how experienced she is,

how long she's been in the industry,

so it felt like the two

older folks are together. [chuckles]

Do you know

what you plan on doing already?

-We're gonna do a bird feeder house.

-[Amaury] Nice.

[Mellisa] With an addition

of a little water bath.

[Amaury] Oh, I like it.

The beauty in this piece

will be the detail you add to it.

-The texture of the wood, the fence.

-[Thiago] Yep. Yep.

I'm gonna just concentrate a lot

on all the detail work.

-He's gonna start on the structure.

-You know, I haven't won anything so far.

Doesn't feel great.

You know, you gotta keep at it,

gotta keep pushing,

gotta keep fighting, and…

-Okay. Yep.

-[Thiago] Fridge?

I just wanna keep it clean.

I wanna deliver a clean, recognizable,

beautifully-constructed birdhouse.

It's a lot of chocolate.

This is one and three-quarters.

-What are you… What are you doing?

-[Tyricia laughing]

What's going on?

-We're envisioning.

-[Stephanie] I'm trying to get a visual.

I like that you're visualizing it

before you actually transfer it

in chocolate.

We came up with the design

that was an upside-down Christmas tree,

'cause it's more fun.

She wanted it

to be a modern Christmas tree,

so that's why

we kinda went with the ring shape

and the cylinder look of everything.

It's very simplistic.

-And it's not a problem.

-Mm-hmm. Okay.

But when you go simplistic, it has to be…

-[Tyricia] Precise.

-Perfect.

After having a good pastry round,

I definitely wanna just do good

and kinda get in the top.

Hopefully it'll happen.

All my zodiac readings say

I'm gonna have a victory, gonna do this,

so I'm like, "Just keep the faith,

Tyricia. Don't give up."

-[Stephanie] Separate them?

-[Tyricia] Mm-hmm.

Let's see.

First thing we need to do,

build a quick stencil.

-So we get the… the curvature of it.

-Can say it's a circumference.

[Amaury] Amanda and Cedrick.

-"Cedrick."

-Hi, Chef.

-I said "Cedrick." I say the French way.

-Yes.

-Oh, you did.

-[both laughing]

What are you planning on doing?

A more modernized light fixture,

if you will.

[Amaury] I like the aesthetic of it.

I like that you're using,

uh, what I demonstrated.

I think you're taking a risk

but a wise risk

by removing the center pole

which is gonna be

a see-through final piece. I like that.

I'm used to doing sculptures like this.

I'm not used to defying gravity.

That makes me a little nervous.

-So about… about here?

-Uh, maybe a little bit more?

[Amanda] But I am growing

a little bit of confidence.

Practice those skills over and over.

You just get back into that rhythm, right?

-Failure is not an option.

-That's right.

-[Thiago] I'm gonna make a bit of a mess.

-[Mellisa] I see that.

You can go ahead with molds.

I'll go grab the rings.

[Juan] I really wanna show Chef

that I'm not just good at pastry

but I also have what it takes on…

on showpieces. I'm just tired

of coming second on showpieces! [laughs]

-You have a sketch of what you're doing?

-[Juan] Yes, Chef.

We are gonna have the base

which is the trunk, like a bunch of vines,

and then our main piece

is gonna be a chameleon eating a bug.

I love this type of very organic,

blended with sculpting,

that demonstrates a certain set of skills.

I have very high expectations for you

because I love this and I want

to see this in actual real life.

-[Daniel] We do too.

-We won't let you down.

-Okay. Don't disappoint me, guys.

-Yeah.

Juan and I seem to be the, uh,

real chocolate showpiece people.

Uh, there's a different caliber

when it comes to the skill there.

-We got this, Daniel.

-Yeah. Absolutely.

[Mellisa] Daniel and Juan

are not the only people

with showpiece experience.

I won gold medals for that,

so I'm very confident.

-Did you measure it perfectly?

-No, that's just to hold this.

Yeah. So, it doesn't matter anyway

because you didn't measure it.

No, but this is the base

where the water is gonna go into.

Plenty of space here.

Yes, but what I'm saying is

you're still not supporting anything.

I… I have a way of doing it where…

-Can you communicate your way, then?

-[Thiago] I'm trying.

-[chuckles] Okay.

-I'm trying to.

[Mellisa] We are definitely

both used to being the boss.

If I'm in control of the kitchen,

I like things to be very precise,

but Thiago doesn't work like that.

[tense music playing]

[Thiago] I hate the floor being supported

by this. You get what I mean?

I do.

-That doesn't make me happy to hear that.

-[Thiago] I know, but think about it.

Everything has to go

in that house before the roof goes in,

and there's gonna be no support

on that roof.

[Mellisa] But the braces need to be done,

and then you can trim them to fit.

Yeah, yeah, yeah.

-[Mellisa] Okay. Are we on the same page?

-Yes, yes.

[Thiago] She has

a very detail-oriented way of working,

where I'm rough around the edges.

So, if things aren't done

the way she envisioned them done,

she'll get a little snappy.

[Mellisa] You sure that's level?

-The bottom part is.

-No, the box… The box is not level.

[dramatic music playing]

[Mellisa] If he makes mistakes

in the structural part of it,

we're both gonna go down for it.

-I feel like this bent a little too.

-So…

Damn it.

[dramatic music continues]

I'm ready to win this.

I'm kinda sick of seeing Juan

at the top all the time,

and it's my turn

to be at the top right now.

It's gonna be my turn

for sure. Like, yeah.

-[Tyricia] Think that's enough?

-[Mellisa] Yeah. We're good.

-[Tyricia] All right, push.

-Uh, so you doubled the disk?

-Yes, Chef.

-[Mellisa] Yeah.

Why?

[tense music playing]

[Tyricia] Well, I mean,

our original plan was to do three.

-Three layers?

-[Tyricia] Yeah, but we only did two.

It's very heavy. I thought it would be

just single… single layers.

[Tyricia] We were too afraid.

And then we had to show

the laminate technique.

You only need to do

the gluing technique I showed you

when it's structural important.

Look… look how heavy this is,

and you have five layers of it.

If you just do a very strong gluing point

with tempered chocolate, it should do it.

That was both of us overthinking.

Definitely a blond moment.

He's like, "Why would you… Why are you…"

-We're like, "Huh?"

-[Stephanie] We're so many things.

Technically, I'm not a blond.

I have dark hair and I dye my hair blond.

-[Juan] And then that's the mouth?

-Yeah, I need to open it up a bit more.

-Yeah, and then add just a bit of the out.

-Yeah, exactly. The cheeks.

This is gonna be beautiful. I'm excited.

Daniel has this, um,

3D way of seeing things,

which is extremely important

when you do chocolate showpieces.

[Tyricia] I see a chameleon.

-[Daniel] I hope you do.

-[laughing]

-I'm not making no elephant today.

-[Tyricia] That's past.

[Daniel] I'm not making no dolphin either.

-Ha, ha. Funny.

-[Daniel laughs]

Sound like somebody a little salty.

-[laughs]

-Yes. Try to make a dolphin in four hours.

[laughing]

He's amazing, he's on my team,

but I cannot let him take all the credit

and take all the… all the wow elements.

[blows sharply]

This side is what you'll see.

And that's where I put most of the time.

It's cute. Very cute.

I was feeling left out,

but I can do it too!

I want him to see me the same…

with the same eyes that he sees Daniel

when it… when it comes to showpieces.

-That's really cool, Juan.

-What?

-Chameleon.

-Yeah.

[exciting music playing]

[heat g*n blowing]

[Stephanie] So, they're not super flat.

You just gotta trust yourself and do it.

You can't second-guess it.

-[Stephanie] Okay.

-You're now at the halfway point, okay?

-[students] Thanks.

-[Cedrick] Thank you, Chef.

[exciting music continues]

[Mellisa] I think

we should only have one bird.

Um, up to you.

-Will the bird be happy?

-[Mellisa] No. I really don't like it.

It's not really in my wheelhouse,

so it looks terrible. [chuckles]

After just coming off the high-risk-

didn't-pay-out egg challenge,

I thought I, uh… This might be too heavy.

This might be too much of a risk.

[curious music playing]

So, one thing I notice,

they are, uh, on a straight line.

If you cut the head,

and you bring it here…

-[Mellisa] Okay.

-[Amaury] You see the difference already?

Yeah. So don't give up.

-No, I don't think you should give up.

-[laughing] I was like…

-Thank you, Chef.

-[Amaury] No problem.

[upbeat music playing]

By the time you're done,

you're gonna have this mastered.

[Cedrick] We're gonna

either love chocolate or hate it.

-[Amanda chuckles]

-Amanda, Cedrick, how are you at?

-We're polishing our butts off.

-We're finessing this chocolate.

[laughing]

[Amanda laughing]

I do think we're the dark horse

in this group of, uh, competitors.

Cedrick and Amanda,

they both inherited each other.

However, they're both doing their job

very professional.

No tension. It's quite interesting.

[Cedrick] So like this?

We're setting them on top of each other?

[Amanda] No.

Like, the glossy side should go out.

The ugly sides

are gonna meet in the middle.

[Tyricia] Okay, you can't keep lifting it.

Just hold it there for a second

to let it, like, firm up. No?

The way they're building that tree

is really brave.

Wouldn't be my method of choice.

Remember, we're gonna glue

the bottom first. Get the heat-- No!

[chuckling] I know, I know.

Telling Stephanie things,

and she not get it the first time…

I mean, she hears you,

but doesn't really listen.

-[Tyricia] Here. Don't lift it.

-[Stephanie] I'm not lifting it.

[Tyricia] You are.

See how you're moving it?

This doesn't have anything

to hold it in place.

[Tyricia] This isn't gonna work.

Okay, we gotta start over.

[Stephanie] She's telling me,

"You're not doing it right,"

and so it just changed my mindset

to where I was much more nervous

than I should've been.

We didn't have a clear vision

on how to execute the tree itself,

and when we were under the stress,

our… our visions kinda just clashed.

[Tyricia] Pick it up, pick it up.

-[tense music playing]

-I'm just like, ugh! [groans]

You know, like, this is…

And you look across,

and Juan and Daniel are over there like,

a musical just making it happen,

and it looks so beautiful,

and I'm just like…

I felt like I was being exposed

as, like, as a fraud.

[whimsical music playing]

Let's do one base like this thick,

and then the next ones we do thinner.

-Yeah. So we have more movement.

-Okay.

[dramatic music playing]

-And then the other way as well, right?

-[Juan] Correct.

Okay.

-[dramatic music playing]

-[airbrush whooshing]

Okay. Good?

-Yeah.

-[Juan] Let it coat.

The little details take so long.

Go.

-[Juan] Guide me.

-[Daniel] You're in. Yep. There you are.

Tyricia, I like the shine

I see on the ornaments.

-[dramatic music continues]

Now we need to hang it.

You have to have nerves of steel,

especially when we're hanging chocolate

from the ceiling. [chuckles]

Little bit higher.

[Cedrick] Push that latch up,

where your thumb is.

[Amanda] It's not a lot of space

to go in there.

[Cedrick] Okay. Got it.

All right. Watch that step.

This is the fastest

my heart has been beating.

[dramatic music playing]

-[Amanda] Oh! Beautiful!

-[Cedrick] Oh yeah! All right.

Yes! It's hanging.

Isn't it inspiring, guys?

-[Cedrick] Okay, we're good.

-All right. Let's keep going.

Chefs, one hour to go.

Time to push, guys.

Lose the base.

Hold the top piece too, if you can.

[Thiago] Don't throw me under the bus

when this thing falls.

Setting up that thing,

my goal's like, "Don't want this to fall."

Watch your hands.

[Thiago] I mean,

I haven't been doing good,

and I'm, like, worried,

because if it falls, it's on me.

-[Thiago] Set?

-Yeah.

I'm out.

-We have another piece hanging!

-[Mellisa] Yay!

And then, after the water,

will you finish the attic?

-Yes, yes, yes.

-Okay.

Ready?

[Juan] Ready.

-Bring it up.

-Oui.

-[Juan] There you go.

-[Daniel] Slow. Slow.

I'm gonna start letting go.

-I'm gonna let go of the bottom.

-[Juan] That's it.

-[chuckles]

[Thiago] I wanna take that iguana home

for my kids.

-[Daniel] It's a chameleon.

-[Tyricia] I'm cleaning.

[Stephanie] We gotta attach these bulbs

to the tree.

-[Tyricia] I can't figure out everything.

-[Stephanie sighs]

I was so frustrated

that Tyricia wasn't putting on the bulbs.

[Stephanie]

I'm gonna start attaching things.

[whimsical music playing]

[Tyricia] You glued them all

to where the shiny part.

-Can't even see it.

-[Stephanie] At least they're on there.

[Tyricia] We have to think things through

before we do them.

[Stephanie] This is how I thought

about it.

[Tyricia] I don't know what to do,

honestly.

Five minutes to go, chefs.

-[Daniel] Oui. Five.

-[students] Thank you, Chef.

-[Tyricia] All that glue, you can see it.

-I know. Well, how am I gonna…Yeah.

We didn't think about that,

but had we thought about putting presents…

[Tyricia] I don't know.

[Stephanie] Don't give up.

Come on. Put stuff on. Help me.

[Tyricia] Going into the exercise,

I was hoping to only keep rising

and finish at the top.

So, to get to that point,

and this start to happen…

[Tyricia scoffs]

…you know, it was just,

like, really, really tough.

-Thirty seconds.

-Thirty seconds, Chef.

-[Cedrick] Tell me when to cold-spray.

-[Amanda] Let's go.

[Cedrick] Ready? And…

[student] Thank you, Chef.

[Amaury] Three,

-Let me start by saying, congratulations.

-Thank you, Chef.

Everything is standing.

This was the hardest part

of this challenge,

and you all succeeded in this.

Cedrick and Amanda,

can you please step forward?

[curious music playing]

All right.

-[Amaury] It's a light fixture?

-Light fixture.

-There's no light in it?

-[both] Oh!

-[clicks tongue] Silly me.

-[students laughing]

[whimsical music playing]

It comes on and off,

just like a light bulb.

-Very cool.

-[Mellisa] Nice.

-[student] Yay.

-All right.

High five.

Great little playful addition.

-I like that.

-Thank you.

You guys were the first team

to lead and hang this here.

We just went for it.

I saw you flipping it, and you did it

with a lot of confidence, actually.

Yeah. Don't…

Don't think about it. Just do it.

I don't think you thought this through.

You just went for it, and that was great.

I like a lot of things about this piece.

The fact that it's the only

hollowed-through piece with no rod

brings for me

an extra special dimension to it.

I like that even the little metal hook

is completely blended within the design.

So, I see only chocolate.

All of this, it's nice,

but you could have done,

like, a perfect line.

When you go simpler design,

everything have to be perfect.

I loved your dynamic. You were both

so much into it. It was quite nice to see.

-Good job.

-Thank you, Chef.

-[softly] Great job.

-[whispering] You too. We did it.

[Amaury] Juan and Daniel.

There's so much technique here.

[happy music playing]

So much texture, color, skills, knowledge.

I like the bark. I like the transparency

of the piece, the fragility.

The color of the flower is really bright.

The beetles,

I love the shine of the shell.

And yet, from afar, I barely see them.

-I think a brighter red would've…

-A brighter red? Oh, okay.

-Then I see them.

-Caught more attention.

[Amaury] Chameleon, spot on.

It's hard to get right proportion

on the first shot like that.

I love the fact

he's eating the little bug.

Still, tongue is a bit messy, a bit thick.

You should've sprayed something smoother.

Imagine it's coming out, it's all slimy,

you… you expect something shiny.

But I love the little guy.

You… you really did a good job.

-Thank you, Chef.

-[whispers] Good job.

Mellisa and Thiago,

can you please step forward?

I really like the idea.

I know architectural chocolate

requires so much detail, attention.

I love the arched window.

I love that you went

and did the little decoration.

I like that you did some

chocolate technique to make the fence.

The bird, I think it turned out okay.

We know there is improvement to be made,

but I can see a bird, definitely.

I love that the shingles shine,

so it really sticks out

from the rest of the house.

Just trimming them

would have really fully finished.

It was also nice to see you work together

with very strong leadership and vision.

Sometimes it can get messy,

but you… you did not go there,

so I was very pleased by that.

Tell me, how did your collaboration

went together?

Our most difficult thing

I think with this is,

it was, like, internal,

us overthinking everything.

[chuckling] That, and then once

we started actually to get there,

we ran into some roadblocks.

Um, but, I mean, it's hanging, so…

You went with a simple design,

yet very difficult to execute.

For the most part, yeah.

[Amaury] When you build it,

I was a little bit bothered by the sticks,

because it's going

a little bit everywhere.

I would've loved for them to either have

the same diagonal or be straight,

or something that it's telling me

that you… you were able to tame

the matter of chocolate.

You… you bend it to your will.

-I think the chocolate forced you.

-[tense music plays]

I like that you did the bow.

I like that it's shiny.

It brings a little bit of craft to it.

The ornament… Nothing bother you

gives you more knowledge

and trust on chocolate.

You might never do this again,

but the next time you build a piece,

you're gonna trust the strength

of your chocolate more and rely on it.

because you guys really raised the bar.

that gives me the best emotion,

because it's in motion,

because it's playful,

it speaks to me.

So, now let's talk about best in class.

And you know best in class,

it's an overall between the work you did

in your pastry challenge

and the chocolate challenge

as an individual and as a team.

There are three people

I would like to recognize

that, in my opinion, today,

really brought something on their craft,

personality, pushed their limits.

I would like Juan,

Daniel,

and Thiago to come forward.

Thiago did an excellent job,

but that whole piece…

was the two of us.

So, yeah, I was a little bit like,

"Okay, well, it's not really very fair."

[chuckles]

[Amaury] Thiago, you went

inside this challenge very focused,

challenging yourself

just the right amount.

I just wanna thank Mellisa too,

because she was a big part

of me kinda focusing a bit more,

taking my time,

getting out of my own head. So, thank you.

And I did not forget about her.

That's for sure. Yeah.

Daniel, you have that right mentality.

Your… Your craft is extremely advanced.

Juan, you really did, uh,

a good job on your pastry.

You really did a good job on the piece,

on your team spirit,

everything you brought today.
