Tell us what you've made
for your vegetable dish.
I did a, uh, pickled
king royale mushroom
with a chasiu bao
pork belly,
some fresh noodles
that were made today,
and watermelon tea.
I made a terrine out of
eggplant, zucchini, and peppers.
There's pickled tomatoes,
shaved jalapenos,
as well as black garlic puree.
What I made for you, uh,
is a chilled summer
corn veloute
with, uh, crispy fried
black c*ck.
I give Angelo credit
for daring to be extreme
in terms of flavors.
This is very indicative
of the flavors
that we enjoy
in our local noodles.
He knows this part
of the world really well.
But this is a dish
that needs work.
Kevin's dish doesn't have
enough oomph for me.
I liked the dish.

I don't know, it takes
a lot of ba*ls
do a vegetable terrine
as your first course.

is an asian-style

The cuttlefish we confit
in olive oil.
The scape is just
lightlblanched,
and it's meant
to be eaten raw.
I did a pan-seared rouget.
Underneath,
cuttlefish noodles,
braised pork belly.
So basically
what I did here is
a stuffed rouget
with a zucchini Pesto.
On top of that is
slipper lobster
with some nice cuttlefish.

and an orange coriander sauce.
So what I did is duck too.
It's roasted duck breast.
And then,
also I took the neck
and I made a nice country farce
and stuffed the neck in some,
uh, super-green spinach.

I actually really liked
Kevin's ravioli.
I think it gave it
a different textural contrast.
I think this is the
best-cooked duck of the three.
To me, this is the one
that was spot-on.
It's interesting what he did
with the bok choy.
Kind of caramelized it.
It's nice, huh?
Very clever.
I loved Angelo's dish.
I loved the ginger salad.
I loved the foie gras
and the cinnamon touch to it.
I think that the one thing
that just didn't belong is--
I'm not even sure what this is.
Yes.
I love the flavors
in Ed's dish.
The greens are a nice,
bright contrast
to that smoky duck neck.
I think it's very smart
that he take care of
the small details,
and you have different layers
of flavors.
When we look at what
they have done until now,
I think it's pretty
remarkable.
And it doesn't surprise me
that those three guys
made it to the finals.
Five minutes, guys.
One side, remember?
It is on one side.
For the fourth course,
Ilan could have got
a little more intricate
with the cake.
How do you want these plated?
There's not much
to 'em.
Ilan's whipped cream,
it could be
a little bit salty
for the judges,
so I'm worried about it
big time.
It didn't bring
the spiciness.
I don't think dishes should
come with so much instruction.
I did a thai jewel.
Try our five star
grilled tilapia.
It's a coconut cream
of vanilla Bean,
a fusion of kaffir lime,
water chestnuts with saffron,
and then a saffron syrup.
My dish is
the Singapore sling, 2010.
Frozen on top--
that's a Singapore sling.
Underneath you're going to find
a bunch of different
tropical fruits.
So what I have is
a sticky toffee pudding
with a little fleur de sel
chantilly.

There's actually more to
Kevin's dish than meets the eye.
I like the fact that he
decided to reinterpret
the Singapore sling.
He just created
a national dessert.
[Laughter]
My God!
I think Angelo's dessert
is really comforting.
I think it's
a very tasty dish.
It's a little confusing
because it borders on
possibly becoming savory.
Savory. Oh, yeah.
Ed's dessert is good.
I just wish that he had
given a little Twist to it.
I think it's hilarious.
This takes some cajones.
Yeah.
It's sort of like
a "[Bleep] you."
Yeah.
It's warm,
and the caramel's delicious.
And then I ate the cream.
I'm, like, "are you kidding me?"
Oh, I like that.
Oh, no!
I like the salty cream.
You know what, this might
have broken the curse.
The curse of the Top Chef
dessert failure.
All three of these guys
just got down and dirty
with their desserts.
They played to their
strengths, and I think that
it's a smart move.
I'm very happy
with what we put out.
I'm happy I had an opportunity
to work with Hung.
And what I had to overcome,
how I got here...
Regardless of being sick,
I think I'm pretty dangerous
at this point.
I'm tasting Kevin's food,
and it's just--it's awesome.
So now, like,
my biggest fear is
Kevin's gonna win.
You want to try the ice?
I got to taste a little piece
of Ed's duck.
With Angelo's, I got to taste
a little bit of his broth.
I think it's gonna be
a tough decision for the judges.
The physical pressure is off,
but the mental
and emotional pressure is even
stronger than it was before.

Why don't we start with
Angelo's seafood course.
You poached the rouget
in the broth, right?
We lightly seared it
on one side,
put a little bit of broth in,
and then heated it lightly
in the oven.
I just thought it was smart
bringing something
that you're familiar with,
but really embracing
the ingredients here.
Thank you.
And to add those vegetables,
it was, like,
an intriguing Twist that
brought texture to the dish.
Thank you.
Let's move on to the duck.
I'm curious about why
you would call that cherry puree
a palate cleanser.
Because it coated every corner
of my mouth.
But then you should go back
to the salad,
which should then be crisp
and refreshing,
and then work your way
back again.
I don't think dishes should
come with so much instruction.
Let's discuss
your duck dish, Ed.
I thought it was a great idea
to stuff the neck.
I poached it to set it,
and then roasted the outside,
just to get
that nice roasted flavor.
And then from there,
I braised it.
I liked it.
Showed a lot of skill
and talent.
Thank you, Chef.
The spinach had
a lot of flavor,
and it looked beautiful.
It was excellent.
Let's talk about
Ed's dessert.
It felt, interestingly,
like you.
Like, "I'm not gonna try to be
anything I'm not."
And it's not gonna look
like much, but just eat it
because you'll enjoy it.
Good to hear that.
I didn't get that at all.
I liked the salt and the sweet.
I thought that was great.
But if this is a close
competition, which it is,
this may make
or break my day.
And it's a dessert
I'll get at home.
What am I supposed to do?
I wanted to make
a lemon curd,
but I could have just
screwed the thing up 100%,
and it would have been garbage,
you know?
Kevin.
Let's start with
the vegetable course.
For my taste, I would have
liked a little bit more salt
and maybe a bit of spiciness.
I put the shaved
jalapeno there to give heat,
but I removed the seeds
out of it.
Yes. So it didn't bring
the spiciness.
Let's talk about
your duck.
I generally don't like
duck a l'orange
or that kind of
classic pairing,
but it really came together.
I thought the duck was
cooked nicely.
It wasn't over-rested
at all.
And what was--
it was duck inside the dumpling?
Yeah, it was ground duck.
I did add a little bit of pork.
Originally, I wanted
to do foie gras,
but Angelo got it all.
It was smart.
It was well done.

I went to the place where the
Singapore sling was invented,
and I'll take yours.
I mean, bring it on.
Thank you.
I liked also the fact
that the coconut
was in the bottom,
and was a surprise.
It was very refreshing.

I'm not gonna pretend that
I know how to make something
when I don't.
I guess, for me,
it's really about a level
that I want to execute at.
And if I'm not
continuously doing that,
then you get Rusty
and you [Bleep] suck.
I don't want to suck.
This was, I think,
one of our best finales.
You know, we took them really
far out of their element.
Yes.
I saw a lot of influence
from the region
with the ingredients,
and with some
of the combinations.
We gave them all
the same proteins.
And it's fun to see
three different takes
on very similar ingredients.
On top of that,
you have four judges
who have very different
points of view.
Different ideas about food.
That's true.
So let's hash it out.
Let's start with the first
course, the vegetable course.
Angelo--I like the fact
that he made the noodles.
The noodle was very light,
and I enjoyed it.
But to me it was almost like
pork belly and pasta.
It was not vegetarian.
Kevin's first course, to me,
it just didn't excite me.
And maybe that's because
it didn't have the sciness.
The dish was very timid.
I loved Ed's corn
and clam dish.
It was spectacular, I thought.
The combination is very
sort of northeastern
United States,
but he used the calamansi,
which brought a new flavor.
And he used those black c*ck
that are so delicious.
I thought the dish
was flavorful.
Yes.
It showed his training.
Let's move on
to the seafood course.
Ed's was confusing.
It didn't taste bad,
it just didn't have a focus.
You've gotta go back
to the challenge too.
The rouget was supposed
to be featured,
and he didn't do that.
Kevin.
I liked his rouget
very much.
He cooked it
only on one side,
made the skin crispy.
The clam, the slipper lobster,
the cuttlefish--
it all was in harmony.
I thought it was
a really nice dish.
I really liked Angelo's
seafood course.
I thought it was beautiful.
I thought the aromatics
were great in that.
And the broth that Angelo made
for that dish was lovely.
But the duck of Angelo
was bizarre to me.
His instincts--
and I kept saying,
"somewhere in here,
there's a great dish."
I thought the introduction
of cinnamon was really good.
I thought it was a little
misguided to make a meringue
to get the cinnamon in there.
The duck from Ed,
I thought he did a great job.
And it was also a lot of work
stuffing the neck.
I thought the duck was
slightly overcooked.
That was a problem.
It was not as perfect
as it should be.
Kevin, he cooked the duck
better than anybody else.
It could be the most tender
of all of them
because he cooked it
Sous-vide.
And I liked the care he took
with a lot of the elements
in that duck dish.
I really loved
Angelo's dessert.
All the flavors worked.
It was really yummy.
Yeah, it was good.
Ed's dessert shocked me.
This is the finale
of Top Chef.
I was expecting something
more clean-cut.
Yeah, but what he said--"what
if I messed up the lemon--"
you know, the lemon curd.
Well, what if he messed up
the duck?
That's what
I don't understand.
That was so bizarre to me.
Kevin's dessert was
so refreshing.
Kevin started very subtly,
and he built, and he built
until the end dessert was
sort of this huge punch.
I mean, literally,
it was a fruit punch.
It punched you with fruit.
Well, you know, this is
such a tough decision.
Ed, he came on really strong
his last two challenges.
He did a nice job.
Kevin, he stayed
very focused.
He paid homage
to every ingredient
that he was supposed to elevate.
Yes.
It must have been
really hard for Angelo
feeling so bad.
I'm impressed that he rallied,
was able to compete
and did a great job.
They are very close.
But I think we have
a clear winner.
Agreed?
Sure.
Absolutely.
Oh, yeah.
Well, let's get them
out here.
Do you think
the whole experience
made you a better Chef?
Yeah?
It's t*rture waiting
in stew.
Someone's life is gonna change
in a matter of minutes.
Would I change anything?
I don't think
I really would.
The win is super-close.
