Some really stupid mistakes.

So I feel like I have

A lot of ground to make up.

And I'm absolutely ready

For a new chance

To prove myself.

Is a very good chef.

He likes simplicity.



He has a ton



Of restaurants, and, um,

He's pretty hot.

Something fabulous

Within the confines

Of their own pantry.

So for this challenge,

Each of you will roll

These dice.

Whatever number you get

Is the number of ingredients

That you'll be allowed to use

In this quickfire challenge.

Salt, pepper, and oil

Are freebies.

Everything else has to be

Within this number.

Two ingredients.

Two ingredients would suck.

You don't want to be forced

To work with too much stuff.

So I'm hoping to roll

To the classic flavors.

So I'm doing the black cod.



I'm gonna cook it

Using classic



Flavor combinations.

To be doing a meal



That requires



A lot of components.

You know what?

[Bleep] it, whatever.

I got ten. I'm gonna figure out

How to do this,

And I'm just gonna make

The best thing that I can make.

So I'm gonna make



Less components



With lots of ingredients.

To make that happen.

I wanted a lower number,



But I got a nine.

So I'm doing

A smoked salmon dish

With spicy, but mellow

Jalapeño emulsion.

[Jesse]

I've got



Nine ingredients.



So I think of scallops.



And, uh, I should have grabbed



A stainless steel pan



So that I could get



A nice, hard sear



On my scallops.



And, of course, I realize this



At the last minute.



And, uh, I get no color



On my scallops.

I think about throwing

Some butter in the pan

To let it brown

And get color that way,

But then that would be

Adding an extra ingredient,

So I can't do that.

Two minutes, guys.

Two minutes.

How many ingredients

Did you have, laurine?

I only got three:

Asparagus, leeks, and lemon.

Interesting. Yeah.

Kept it pretty simple.

Made a jalapeño emulsion

With some parsley, lemon,

Garlic shallots,

And parsley.

It's carrot soup with ginger.

I did a salad

Of grilled asparagus

With golden raisins,

Pine nuts,

And a really light

Cashel blue cheese.

Interesting.

What is this, mike?

-I had eight.

I have a simply made

Nitro gazpacho,

Compressed cucumbers,

And a little bit of bread toast

On the side.

Right, that's a great twist

On the tradition.

Wow, this looks pretty.

-Thank you.

-[Padma] how many ingredients?

Ten. So what I have

Is asparagus and celery salad.

It sits on top

Of a fennel cream,

And it goes

With a boiled egg.

[Todd] I like the acid in it,

Really nice touch.

Hi, padma.

I had eight.

I grilled lamb, and I made

An apricot "mostarda."

-That lamb looks very rare.

-It's a little rare.

[Todd] thank you, chef.

-How are you?

-I had ten.

What I did

Is a poached black cod

Over a puree of carrot

And ginger

And finished it

With daikon radish sprout.

You poached this

Really rare.

[Jesse] hello, padma.

I had nine.

It's scallops,

Chimichurri,

Smashed garbanzos

-With a little bit

Of toasted garlic.

-[Todd] chimichurri.

It seems to be the sauce

Of the year.

It goes really, really well

With fish, so...

-Thanks.

So, todd, how did our chefs

Roll with it?

A lot of great flavors here,

Great effort by all of you.

Okay, so which chefs

Had your least favorite dishes?

Jesse.

I thought the scallops

Needed a sear on them.

They were blond.

And again, when you

Have mushy on mushy,

It's not nice.

[Jesse] I'm in the bottom.

I'm just like, "damn.

[Chuckles]

Again."

And then, eve,

I thought the blue cheese

Was way overpowering

The whole dish.

The presentation

Could've been cleaner,

More interesting.

The next one

Was bryan's dish.

The flavors were pretty good.

I think there was a little bit

Too much yuzu in there,

So it overpowered

The dish.

Okay.

Well, who had

Your favorite dishes?

Michael v.,

Delicious dish.

I loved that it came

From a classic dish.

Um, had a lot of really,

Really interesting flavors.

The flavors really hit me

Right in the face.

But then also very delicate

And light at the same time.

And we've decided to make it

A battle of the sexes.

You'll be cooking

In two teams,

Women versus men.

The women will be catering

For the bachelor.

The men will be catering

For the bachelorette.

The guys are very strong.



And the girls, they tend to be



A little bit more green.

I think that we got

A very good chance to win this.

The winning team

Will get immunity,

And a chef

From the losing team

Will be eligible

For elimination.

I think the "battle

Of the sexes" challenge

Is absolutely ridiculous.

It doesn't matter



If you're a boy or a girl,

And I'm a little pissed off

About it.

These trays of shots.

And I'm a little confused

By that.

[Karen] we have our three

Favorite shots.

The first one,

The slightly pinkish one,

Is the moscow mule.

The middle one is tequila.

And the last one

Is golden delicious.

And we are looking

For some good food

To be paired

With these shots.

Pairing with shots



Is not really a normal thing.

It makes it a little different

And a little more difficult.

So you'll have

Ten minutes

To meet with the bachelor

And bachelorette

To plan your meal.

So we're given



Three shots.

And we each have to pair a dish

With those shots:

A moscow mule,



Which is, like, a gingery



Vodka, grapefruit shot,



A shot of tequila,

And a shot called

The golden delicious,

Which is sweet, gooey,

And disgusting.

So me and the guys,



We get our ten minutes



To meet with karen.

And each team

Has to do at least two dishes

To match each c*ck.

[Karen] I am a pescetarian.

And by pescetarian,

All seafood, but no meat.

But a lot of my friends

Do eat meat.

I have one friend

Who's vegan.

So maybe one thing

For her.

Um, you said

You like spicy food.

I do. I put sriracha

On almost everything.

I think... I think we got

A lot of information.

Do you tend towards fish

More than shellfish?

I do love shellfish.

Do you want to have

Something sweet there?

I have a huge

Sweet tooth.

What are your favorite

Asian foods?

Japanese.

I love really lean meats,

Like kind of tuna, lamb.

Lamb? Okay.

As the women,

[Robin] this is

Our first opportunity

To all work together.

When I first started out,

It was definitely a man's world.

So I'm... I'm really excited



About the opportunity to show



That we're incredible chefs.

So we go shopping



In whole foods



For the bachelor/bachelorette



Party.

Versus the women.

And if we win the challenge,

Then none of us go home.

Being married,

I want it to go well

For the... For the bride

And groom.

I mean, I think

It's important.

We have a chance



To go in as a team



And actually do something



For somebody else.



And we want to succeed.

Some type of lamb dish.



From a catering standpoint,



People want familiar food



To some level.



And I think the boys



Are gonna go off



On some crazy tangents,

So I think the girls

I'm thinking of doing octopus

With the tequila shot.

The octopus is frozen,



But it looks like



It's a good product.

And if it isn't, then I will

Make something else up

On the fly.

Is a tuna tartare

With, uh, thai flavors

With a moscow mule.

The bride was very specific

That she was interested

In something like that,

So I think

It's gonna do well for me.

More than she likes

Your job is to keep these

Alive until tomorrow.

Why?

'Cause I know nothing

About flowers.

Michael tells me

And I haven't achieved that



So far.

To do a frozen version



Of the golden delicious



With, um, a goat cheese cookie.



You have to figure out a way



To connect yourself



With the guest.



And in this challenge,



That's what I'm gonna do.

My dish is



A shrimp ceviche



For the tequila shots.

I feel good about designing

A dish around the shot,

Because I have my diploma

In wine and spirits.

So it's something I enjoy.

[Ashley]

A watermelon carpaccio

With the tequila shot.

I want my team to win



Really badly,

Despite my negative feelings

About the challenge.

I think a lot of the women



Are feeling outmatched



By the men.



They're working



With some ingredients



That some of the women



Have never even seen.

And I think it would be

A really good confidence booster

For... For the women to win.

Be making a tofu ceviche

With a tequila shot.

My biggest concern

Is the bride

And all her girlfriends,

You know, it's very difficult

About this challenge,

Especially since my brother

Won the quickfire challenge.

I want to beat him.

You know, I'm a good cook.

So I choose a tequila shot.

And I'm thinking of making

A sweet-and-sour meringue.

When you put it

In your mouth,

It stays nice and crisp

On the outside.

But when you bite into it,

There's a soft texture

To the guacamole,

Which is pretty unique.

On a sweet-and-sour macaroon.

I didn't even know

I feel like I have

That maybe the group of us

And it is freaking amazing.

It is the most gorgeous pool.

The cabana's actually bigger

To set up poolside,

Which is a pretty short

Period of time

To get this knocked out.

We have three dishes

On this table too, guys,

And it looks a bit muddled.

Well,

Both want to win this challenge



Really bad.



But the sun is...



Is beating on us.



And for me, the only way



I'm going to be successful

Is to make my dish

At the moment.

So the dish is risky.

But I think it's important



To take risks



Every now and then.

With ahi tuna.



I'm worried



About a plate garnish.

So I remember that I grabbed

Some shiso leaves.

So I start throwing those



Down on the plate,



And I feel like



It looks awesome.

And I'm feeling confident,

And I'm feeling really confident

For our team overall.

Of jesse's peppers.

I'm pretty much focused

On my dish,

Because I'm having some issues

With the lack of flavor

In the shrimp.

Is not penetrating it

Or affecting it at all.

But I'm gonna take a step back



And just do my best,



Because I'm excited

That we're cooking for

And that they found

Each other

And, you know, that they're able

To legally get married.

But that is by itself.

Uh, that's, uh,

I'd like to introduce you

So who made what?

I did a duck mole

With, uh, cocoa nib.

There's, like, five chilies

In there,

Five different kinds

Of nuts.

I did it with a little apple

To complement the cinnamon.

I did a moroccan lamb chop.

The lamb is in kind of

A nice, smoky spiced rub,

And then it's a pomegranate

Pine nut relish on top.

So are these all the dishes

That pair with the shot?

-Yes.

-Okay, great.

Tell us

What you made for us.

So this is a gulf shrimp

And avocado ceviche

That's dressed with just

A little smokey tomato

And chili salsa

With a little bit

Of fresh popped popcorn.

So I did

An octopus ceviche

With a really light

Citrus vinaigrette.

There's a little bit

Of smoked salt,

And it's finished with chives,

Fennel, and mint.

I like the popcorn.

It gives it a little texture.

Yeah. Good.

To the end of freedom.

[Laughter]

-Eve's ceviche.

-I didn't like that one.

-Not at all.

-That was pretty nasty.

The shrimp are fishy.

Yeah, she didn't cook

Them right.

She cooked shrimp

In the last challenge,

And we beat her up for it.

-And she clearly--

-Did it again.

-Jennifer's.

-[Todd] it's good.

[Tom] it could use

A touch more salt,

Which would bring out

The acid and everything.

But it's nice.

I think the acid

Was actually great.

It also pairs well

With the tequila.

-Yeah.

-So eat your octopus.

I'm going back for thirds.

-Mmm.

-I love that octopus.

It's filled with guacamole

And also corn nuts

And a corn puree,

Almost a play on chips

And guacamole.

So I made

A lobster c*ck

With a spicy habanero

Tomato sauce.

I did a tofu ceviche

For all those vegan people here,

Marinated in lemon and lime

With a little bit of tequila

And a tortilla

I freshly made.

About the shrimp?

I didn't love the shrimp.

But the groom had said

He loves spice.

He loves mexican

And spanish flavors.

And I wanted to do something,

You know, for him.

It didn't taste balanced.

The salsa really was strong.

And I really kind of

Couldn't taste anything else.

I was hoping

That the shrimp part of it

Would have more flavor

And sweetness.

But you knew the shrimp

Didn't have flavor,

So why didn't you try

To do something about it?

I-i did. But it's just,

Like, if you cook past it

Without enough salt,

It's hard to get the flavor

Into it.

Okay.

You know, as a chef,

One of the things

That's so important is,

You know, you got to adjust.

If something's not right,

You got to make the difference.

Preeti, were you happy

With the way

The dish turned out?

Um, I was.

I felt like it was

A real crowd-pleaser.

People kept coming back

For seconds and thirds.

I thought I did

A really good job.

Did you marinate

The tuna at all?

Um, I marinated it overnight

Just in olive oil, salt,

And the spices.

It almost appeared

To be cured,

And it seems

Like it was overcured.

Also, it was very hard to eat

And pick up

With the shiso leaf

Underneath.

Yeah.

It was so hot out there.

And the shiso leaves

Were just wilting

Faster than I could

Kind of change them out.

I'm assuming

You're paying attention

To... To where we are

When we're eating.

You'd think for a second

You'd say,

"Oh, my god,

The judges are coming,

Let's swap this out

And make it fresh."

-Yeah.

-It wilted that fast?

It was wilting,

I would have taken

The shiso out altogether.

With the eggplant,

I was trying to figure out

Where you were going.

There was a lot

Of different thoughts in that,

And it didn't seem to all sort

Of cohesively come together.

It just didn't seem to go

Ashley, why did you decide

To do two dishes?

We definitely had the time,

And we definitely had the money.

And, you know, we just decided

To go with it.

But why not just do

One amazing dish?

Well, yeah.

I thought you did do

One amazing dish.

I liked

The watermelon a lot.

Yeah, I mean, I de...

I mean, I totally get

Why I'm here.

When you make

A panna cotta,

There's that fine line

Between it being too rubbery

And being perfectly silky

And delicious.

The panna cotta,

Like, it had a lot of flaws.

The top of it's,

Like, all wrinkly.

You know,

That's ridiculous.

Why did you choose

Panna cotta?

I don't want to do

A hot dessert.

I mean, it's

Million degrees outside.

I really liked the bay...

The flavor of the bay

With the ginger.

You used a lot

Of bay leaf,

But it seemed a little bitter

From the woodsiness.

I toasted the bay,

But I think I probably

Took it a little too far.

[Tom] there's tannins in it.

And if you expose it

To heat too long,

It actually starts

To bring out the tannins,

And it creates

An astringency.

Was it all dried,

Or did you use some fresh?

I used, like,

Two fresh leaves.

But it was mostly dry.

If you had fresh,

Why go to dry?

Yeah, I mean, i-i wanted

To do this dessert.

And, you know,

I'm not a dessert technician,

Obviously.

It was not a successful dish.

She sort of understands

What she's trying

To accomplish.

Preeti's dish to me

Just felt flat.

There was no fight

To that dish.

There was some amazing food

At this party tonight.

And, you know, that...

That hors d'oeuvre

Is just not gonna cut it

With this group.

You know, the tuna,

You should only cure it

Or marinate it

For maybe an hour or so.

It takes on

This translucency.

It just gets... It gets mealy.

You should know that

At this level.

But until we started

Questioning her,

She thought that dish

Was really good.

People were coming back

For seconds and thirds

And saying, like,

"This is awesome."

And they loved it.

It's a crowd-pleaser, you know?

Okay, well, I think

We have our decision.

But also to pair your food

All in all, it was a fun,
