I'm gonna be cooking

[Kathy] I'm trying to execute

an extremely high-end dinner

for very refined guests.

And the kitchen
is 15 miles away

from the dining room.

My main entree...
my Lion's Head Meatballs.

It's been sitting in the oven

way past the time that
it needs to be in there for.

My biggest fear is that
I'm gonna be serving

an overcooked meatball

and this should be
my "Aha" moment.

The showstopper...
it's my main entree.

I'm Kathy Fang.

I'm the chef and owner

of the esteemed and hottest
Chinese restaurant

in San Francisco, Fang.

In this city, my father,
Peter Fang,

is the godfather
of Chinese cuisine.

That came from Wolfgang Puck.

-That's pretty nice.
-[chuckles softly]

[Kathy] He owns the famous
House of Nanking

-just down the street.
-[cheering]

[Kathy] While most kids
grow up playing games,

I spent my childhood
studying cooking

and learning the secrets
of his success.

Get ready for service.

[Kathy] Today, I'm a chef
that takes a lot of risks

with my own dishes.

This is one of the new dishes
that we're trying out.

Just like my dad, I wanna
revolutionize Chinese food

and take our family legacy
to the next level.

I'm a two-time
Chopped champion

and one of the country's
most sought after chefs.

The only thing more fiery
than the food

is my staff.

I can promise you one thing...

there is never a dull moment
at Fang.

I'm catering a huge dinner

for Kristi Yamaguchi's charity

for the creme de la creme
of San Francisco society.

If anything
goes wrong tonight,

my dad will put the brakes on
any future off site events.

Lo and behold...

there is a missing meatball.

I don't know what to do.

[Justin] You're gonna

I mean, we can only use this.

And by the way, I don't have

if I see that we're all done
with plating,

I wanna give everybody
a little extra.

So, he gets these green

gai lan vegetables.
[chuckles softly]

It looks like he's eating
at a different restaurant.

And he's sitting next
to Kristi Yamaguchi.

This is a disaster!

[Kathy] How are we
down a plate?

I thought we were
going to be...

22 diners in here now.

[Lillian] No, we were
supposed to be at 20

and then I told you 21,

but you invited two,
so it became 22,

but we never had
that extra plate.

Perfect, thank you.

I even got the special bowl.

-[chuckles]

The third course
is called Lion's Head.

My parents are both
from Shanghai

and Lion's Head is actually
a very traditional

pork meatball
that's cooked in a casserole

and so, they call it
Lion's Head because...

when you cook the meatball,

it actually resembles
a Lion's Head.

-Wonderful. Thank you.
-[all applauding]

Now, this is amazing.

[Lillian] See, Kat?
Everyone's happy.

You need to chill out.

You just need to learn
how to trust me.

I mean, I'm trying.

and the crazy set of stairs
we had to climb,

probably one of
the best events

I've ever thrown.

Yup, that's why I'm here.

[Kathy] San Francisco is where
tech comes to thrive.

Every year, there's a cyber
security conference

and it brings over 50,000
to 100,000 people.

It's gonna be right next door
to us.

It's gonna be a huge week

and the pinnacle of this week

is a private party that
will be thrown by a company

called Entrust.

Caleb is a leading expert
in the cybersecurity field.

He's been asked to be
the keynote speaker

at the fireside chat

at the Entrust event.

[Caleb] I just wanna
be prepared.

I wanna feel comfortable
with how the event's gonna be,

since I'm gonna be
talking at it.

When you talk to Kathy,

I'm always Kathy's husband,

when you're in the world
of food.

But in cybersecurity,
she's like...

"Oh, you're
Caleb's wife." Right?

And so, that's my domain.

I got into security
when I was 14.

I was always on restriction,

because I was always
doing bad things.

Like, I kicked out
of four schools in one year.

So, my dad bought a computer.

And so, he put
a password restriction on it.

And I was like...
well, screw this.

And I figured out
how to bypass
the password restriction

so I could play video games.

I married a computer hacker
gone good.

So, these are the signature
Fang dumplings.

We're going to serve them
bite-size.

Is that for me
or is that the kind of...

Well, if I knew
you were gonna come,

since the pandemic,

we haven't actually

done events on all
three floors at the same time.

It's like really stressful.

is the ultimate test

for my expansion plans
at Fang.

to see if they can
pull it together

and make it work.

or have any failure.

everything's handled,

menu on each floor.

from what's being served

[Kathy] The first app that I'm
thinking of doing

is a curry croquette
with a smoked salmon tartar,

which is very popular dish.

The second is tofu
and edamame in puffed rice.

The last one that we're going
to be doing is a crab salad.

And I don't know if they told
you about the 3D experience

and it's gonna be about
ten feet, so you're gonna...

This is gonna take up,

-essentially,
this whole section.

-I think it'd be okay though.

Wanna go look

So, this is the lower floor.
This is a beautiful floor.

It's gonna be
the walk the plank
virtual reality, which is

so cool and so scary.

So, we're gonna
set up the plank,

so it's gonna go
from there to there.

-[Kathy] Okay.

and they put goggles on...

and what they see
when they walk the plank,

is they see themselves
walking between two buildings.

-It's terrifying.
-Oh, my gosh!

There's gonna be drones...

be a virtual, like...

"Walk the plank"
or whatever that means.

And then some 3D art.

I mean, it's gonna be
a circus in there.

So, a separate c*ck
for this floor.

We can do one special

-pasta app for this floor.

You must have to make
a lot of food for 500 people.

A lot. We are very busy.

It's no secret that food
that's actually

served at the conference

is bad.

So, people tend not
to eat anything.

By the time they get to Fang,
they are "hangry".

And they want drinks
right away.

They want food right away.

And they're gonna teach them
how to fly these drones

around the cage.

[Kathy] We have

Next week is a huge
cybersecurity conference

that happens every year.

We need to be on point.

RSA starts on Monday
and ends on Thursday.

On Monday, we've got

two private events.

Going to be a c*ck
reception as well.

Tuesday, we're gonna have
another event.

Meanwhile, this floor
is going to be open

and we are gonna
have reservations.

Wednesday, upstairs we're
gonna have about 85 people

for a seated luncheon.

Any questions so far?

I'm very nervous
going into cyber tech week.

But I do know that this
is very important to Kathy

and the restaurant to host
multiple events.

Personally, I'm freaking out.

At the end of the cyber
security conference,

we have the Entrust party.

The head count right now
is gonna be 500 people

for this event.

So, that's a big job.

[Lillian] I'm sure you've
probably noticed me

interviewing some people
coming through.

What does that actually
mean for me?

[Lillian] Listen, it's weeks
like these that

make or break a restaurant,

because you can either gain
a ton of customers

or lose 'em all with
bad word of mouth.

It's my job to ensure that

Fang runs as smoothly
as possible.

Exceptional is the standard.

Krista, I know you're
basically the newest.

You haven't done anything
quite to this level.

We're gonna put your feet
to the fire...

It's the best way I'll learn.

really, like, step up
to the plate

and go at it like,

[Kathy] Krista's been with us
for several weeks now.

She's learned the recipes,
she knows the menu.

But speed is something
that she's still lacking

and it's so important
at the conference

to work very, very quickly.

Thousands of people
are coming in.

People want
things instantaneously.

She needs to make sure
she does not get frazzled.

Cybersecurity week's
actually new for me.

I'm used to 70 people at Fang.

the Cybersecurity conference.

He likes to go around and

as much as possible.

I'm getting my steps in today.

This is my very first time
doing double shifts at Fang.

I thought I was
gonna be just...

There's so many
different parties

on the top floor,

everything's going on.

that's full of flavor

that goes on top,

needs to happen
at the very last minute.

A la minute, right? You gotta
put it on and serve it.

So, it's cold, refreshing

And the next thing we're gonna

that I've created
for this event.

Because in the heat

orders that they're missing.

your head on straight.

He's kind of a hippie dude,

where I get kind of
my chill vibe.

But yeah, I don't know
how to read or speak Chinese.

So, this is definitely
out of my league.

So, we got dried bean curd.

we just have to google it.

we find all this stuff?

when you're making tofu

and you just take that
and extract it.

that Kathy wants.

kind of flavor going on.

a very manageable

trickle-in of guests,

we have a flood.
